Home Demonstration Agent
It can be great convenience to
the homern aker to freeze cooked
or prepared foods. However,
with some foods it's easier and
quicker to start from the be
ginning than to thaw and reheat
the frozen prodect. Remember
when freezing cooked or pre
pared foods:
1. The storage period for
most frozen cooked foods is
relatively short.
2. In most instances, no
special recipes are necessary
in preparing cooked foods for
ireezin , just use a standard
recipe or your favorite.
3. The actual cooking pro
cess should be as short as
possible because the additional
cookirv during preheating for
serving may result in soft tex
tures and loss of flavors or
"warned over" flavors.
4. Quick cooling is very
important as this will stop the
cooking and help retain the
natural flavor, color and tex
ture of the product. It will
also retard the growth of bac
teria that may cuase spoilage.
%. Package air tight in
moisture-vapor proof packag
ing materials.
6. Quick freeze and store at
zero degrees.
7, Use within the recom
mended storage period.
As you take out some of the
foods you froze this summer,
why not use the space to store
some pre-cooked foods?

You can select chicken for
quality even though it is cut up
and packaged. To select a suit
able young bird, look for a
plump body with a well-fleshed
breast and thighs; clean, thin
skin free from abrasions,
bruises and pinfeathers; fat well
distributed under the skin giving
it a light yellow cast, and a
breastbone with a flexible carti
lage tip.
An older chicken of top cali
ber lias similar characteristics
but it usually has more fat, a
firmer breastbone and a thick
er skin than does the young bird.

A questionnaire was sent out
to randomly selected farmers in
23 Georgia counties that parti
cipated in the 1960-61 Soil Ferti
lity Program. A total of 414
farmers returned the question
naires. Results of the survey
indicate the following:
1. The majority of farmers
are following lime recom
mendations but are not follow
ing fertilizer recommenda
tions. This would indicate we
need to intensify our educa
tional efforts” towards helping
farmers interpret soil test
fertilizer recommendations and

2. In terms of dollar value,
following fertilizer arecom-
mendations was profitable on all
crops when compared to the in
come of farmers who used less
fertilizer than recommended.
Following lime recommenda
tions was also profitable on
crops where comparisons could
be made.
3. Apparently, farmers are
following phosphate and potash
recommendations to a greater
extent than nitrogen recom
mendations. In light of this,
educational efforts should be
increased towards convincing
farmers that it pays to follow
nitrogen side and top dressing
recommendations.
4. The great majority of
farmers (98%) said that soil
testing was of value in their
farm operation. This sub
stantiates the soundness of our
soil testing program and indi
cates that farmers have confi
dence in the results of soil
analysis and lime and fertili
zer recommendations.
5. Results of this survey
show that goals can be realized
if farmers will have their soils
tested and follow through on the
lime and fertilizer recom
mendations, as well as other
recommended agronomic prac
tices.
The Georgia Department
of Agriculture today issued a
warning to all farmers to view
with caution and mistrust any
free lance, so called "agricul
tural engineer" or “soil and
fertilizer expert” who is trying
to sell outlandish new ideas that
have not and cannot be backed
by state or federal analysis.
The Department of Agricul
ture has received numerous
calls from south and middle
Georgia stating that a man, re
portedly with offices in Florida,
is duping the farmers in that
area with outragious and un
founded claims of "new space-
age" fertilizer and soil recom
mendations.
Although his primary target
seems to be fruit and nut
farmers, he is not limiting him
self to any particular group.
The Department of Agricul
ture warns all Georgia farmers
to beware of any fast operator
with claims of working miracles
for his crops. State officials
have checked liis claims and find
no foundation for his recom
mendations and that theycannot
be substantiated.
Agricultural officials further
request that if farmers are ap
proached by any so called
“agricultural engineer"whose
claims have not been supported
by state research, they should
check with their county agent or
report directly to the State
Department of Agriculture.
BEAUTY
Cuticle Care
Well cared for cuticle is two-
thirds of nail beauty. A warm
oil treatment does almost mi
raculous things to smooth them.
Heat olive oil in a small
metal bowl over hot water or
a candle warmer. When warm
dip the nails for a moment or
two. Place hands on a clean
towel and gently push back the
cuticle with a cotton tipped
orange stick. Shape the bases
at this time if you’re not pleased
with your nails outlines, and by
persistence you can lengthen
your nails and make them more
like the perfect oval. Then lift
the cuticle very gently and run
the orange stick under it, all
around the nail.
Badly neglected cuticle may
need a cuticle remover after the
oil treatment. If so, follow
directions on the bottle of
remover.
Repeat the oil treatment as
often as you like. Daily is
not too much if nails are in
bad condition.
Toes will benefit from this
same care. A loaf pan is
the right size for dipping toes
and it’s best to do it after a
bath.

cent impressive capping cere
mony in which Miss Sandra
Gentry of Reynolds received the
cap bestowed upon student
nurses, successfully com
pleting their first year of the
three-year nursing program.
President Moll gave the in
vocation. Parents, relatives
and friends of the students were
welcomed by Miss Florence
Bridges, Instructor of Nursing
Education. The Reverend Harry
Moore, introduced by President
Moll, gave an inspiring address,
The Benediction "The
Lord’s Prayer,” was sung
by Mrs. Shirley Shell, In
structor of Nursing Education,
accompanied by Miss Rossie
Andrews.
After all were capped the
Nightingale Lamps were lighted
by Hollis King of Reynolds, the
only male student in the group.
Then the students recited the
Nightingale Pledge led by Miss
Ruby Alston, Instructor in Sur-
ger>.
Let us remember that revolu
tions do not always establish
freedom.

OF CHILDREN
Two-year-old Johnny was
playing quietly in his room when
his mother heard him choking.
She rushed to his room to find
him with talcum powder in his
mouth, breathing heavily and
coughing. An open can of tal
cum powder was beside him.
She rushed him to the hospital.
In spite of everything the
doctors could do, Johnny died
the next day. Cause of death
was massive inhalation of tal—
cul powder.
The average household is
crammed with potentially
death-dealing powders, pills,
and liquids. Of the S22.000
poison casualties every year,
two-thirds are chirdren under
five.
The under-five years are
ones when the youngster is de
veloping inierest in the enviro-
ment and everything in it. He
works hard to get into every
thing and much of what he hand
les goes into his mount. All
in the spirit of exploration. He
will open even tightly-fitting
doors on kitchen and bathroom
cabinets, unless they’re kept
locked. He will climb onachair
or table to get at something that
is out of his reach. He will
spend hours working at the cap
on a pill bottle until he has
it open.
Out of baby's reach probably
means out of your reach too.
But it's better to have the in
convenience of climbing on a
chair or stepstool yourself than
to let baby get into something
that will harm him.Anything that
can’t go very high up should
be locked up.
These precautions may seem
like a fearful nuisance, but they
can save your child’s life.
