FRESH CRANBERRY TAPIOCA PARFAIT The brilliant red color and tart-sweet tang of cranberries combine deliciously with the creamy blandness of the tapioca- whipped cream mixture. An easy and very good dessert. We extend to all our sincere wishes for a warm-hearted Yuletide. May your holidays be bright os the lights on the tree ... rich in peace, contentment and the presence of friends and loved ones ... and radiant with the glory that shines over all during this joyous season. SUMTER LIVESTOCK ASSOCIATION AMERICUS, GEORGIA FRESH CRANBERRY TAPIOCA PARFAIT 1 egg, separated, 2 cups milk, 3 tablespoons qick-cooking ta pioca, 5 tablespoons sugar, 1/2 teaspoon salt, 1/4 teaspoon ground mace, 1/2 teaspoon pure vanilla extract, 2 teaspoons fresh lemon juice, 1 teaspoon grated lemon rind, 1 cup heavy cream, whipped, Fresh Cran berry-Orange Sauce. Beat egg yolk and 1/4 cup of the milk in a saucepan. Add remaining milk, tapioca, 3 tablespoons of the sugar, salt, mace and pure vanilla extract. Stir and cook over medium heat until mixture has thickened 6 to 7 minutes. Beat egg white un till it stands in soft, stiff peaks. Gradually beat in the juice and rind. Cool. Fold in whipped cream. Fill parfait glasses with alternating layers of pud ding and Fresh Cranberry O- range Sauce. Top with addi tional shipped cream, if de sired. YIELD: 8 to 10 serv ings. SAUCE 2 cups fresh cranberries, 1/2 cup sugar, 1/2 cup water, 1 teablespoon grated orange rind. Wash cranberries and place in a saucepan with sugar and water. Cover, bring to boiling point and cook only until skins pop, 8 to 10 minutes. Cool. Add orange rind. Spoon into parfait glasses, alternating with layers of tapioca pudding. YIELD: 1-1/2 cups.
