THE CANDLER RESTAURANT;
ITS THREE PRIME POINTS
The opening of a genuine modern
restaurant In the Candler Building by
th. Silverman Catering Company sug-
***** the three fundamental principles
*hlch differentiate a restaurant of the
latest and highest type from all others.
. • • •
A modern restaurant, of course, dis
cards all old methoda, not merely from
* whimsical viewpoint of prlvldlng
something novel, but with the higher
purpose of supplying the most intelll-
fent public demand with all of those
advanced methods of catering which
science has demonstrated are essential
w healthful food—Its preparation and
ha salutary digestion.
Health Is the greatest blessing, be-
“use, without It, there can be no en
joyment of other blessings. It needs
"o argument to show that pure food,
properly digested, la a condition prece
dent to health—
And therefore the best methods of
Preserving food from all taint, both tn
tt raw state and tta cooking, are of
incalculable Importance.
These methoda, according to scientific
oemonstratlon on hygienic lines, are the
i*test system of refrigeration, the latest
■ystem of cooking by steam, nnd the
“test system of cooking by eletrtclty.
*nd It may be added, that the purest
P°*slhle air should always circulate In
* leering establishment.
Th- Candler Restaurant, being a
modern restaurant of the highest class,
“ Provided with all of these Indispen-
wlei.
Th. system of refrigeration In the
vsndler Is ss perfect as human skill
■M money can make It. It Is worth a
visit to this restaurant to see the re-
T,''rotors placed at Intervals In the
‘lichen. Walls of solid masonry, sev-
*r»l feet thick, shut In the choicest
P*Y* obtainable, beef, mutton, pork.
...: n,h ' e *c.—the air being kept arctic
•• the heart of an Iceberg by the brine
•Jpes connecting the refrigerator with
'"I'ce plant In the basement
ts ' ,b, olute freshness and purity of
n* meats guaranteed by this rigldlly
and frigidly rigid system Is as
P“in as tne white frost which enfolds
“* Pl|>es.
a,* 1 *" Impossible for a suggestion of
* 'en a shadow of dust, or a phan-
tJ? *moks to get Into one of these
' • -enable refrigerators. Not a scln-
•** "I extraneous matter could live a
second In the marvelously rarefied, per.
fectly clarified Ice-spotted air If It did
squeeie In.
But the meat Is taken out to be
cooked—
What then?
Why, It la cooked by steam In a
kitchen of Immaculate cleanllnesa In an
otmoaphere kept pure by constant ven.
tilatlon. Cooked where there Is not a
suggestion of soot, or smoke, or dust,
or dirt, or ashes, or any extraneous
matter, any Impurity In the air or
about the utensils which can harbor a
germ.
You see, the steam process utterly
eliminates the old method of cinders
floating In the smoke-ladsned and
soot-trlmmed atmosphere, heavy with
oppressing fumes.
And then, too, much of the cooking
Is done by electricity, than which no
cleaner, purer method can be Imagined.
This magical and, at the same time,
perfectly practical method is not only
absolutely free from all taint, but la
done with a flash and tends not only to
quicken the admirable service but to
brighten the scene at The Candler.
Those electric waffles, for Instance,
are as toothsome as they are whole
some, and created with a swiftness that
puta the old way to shame.
It only remains to sketch the latest
system of ventilation. It Is done by
suction, which Is a distinct Improve-
ment over every other method or ree-
taurant ventilation, because it not only
loto the pure sir In, but puts th# im
pure air out. Old-fashioned windows,
or sky-lights, or fans don't do this.
They simply let the fresh air In and
stir It. but when the oxygen Is per
meated with carbonic acid gas the Im
pure mixture Is not driven out.
But at the Candler Restaurant the
Impure air Is driven out and the pure
air Is brought In and this la kept up all
the time. t
The method Is simple—all great
things are simple. There are two sets
of columns In the center of the res
taurant. Great fans whirring In the
basement, but not heard In the restau-
rent, force the fresh air <JP
one set of columns and distribute It
over the restaurant and kitchen. Other
great fans In the basement, turning In
the opposite direction, draw the Im
pure air down and out through the
other set of columns.
In this way pure air Is ttcpt ln clr-
eulallon In the restaurant all the time.
The ventilation Is constant—not
spasmodic. ...
The conclusion l» Irresistible that
Shakespeare, who could see further
fhidind every other way tbanany-
bodv must have had a modern restau
rant like The Candler In bis mind s eye
400 years ago when he said tn Macbeth:
“Let good digestion watt on appetite.
And health on both.”
