Once hot, saute onion for 2 to 3 minutes. Remove from heat and add to a crock pot along with the black eyed peas, Rotel tomatoes, chopped green chil ies, minced garlic and Velveeta cheese. Stir to combine, then cook on high for 2 hours, stirring occasionally. Once done, stir until cheese completely melts and sauce is creamy.
