Cooking 'small' can be a challenge
Cooking on a small scale can be a
real challenge, especially for those
who love to cook. If you’re used
to dealing with
whole chickens
and pot roasts,
or have visions
of simmering big
pots of stew and
soup, it’s tempt
ing to cook too
much and wind
up with more
leftovers that
get less tempt
ing each day.

It’s also tempting just to eat out
or “take out.”
In either case, you can wind up
uncomfortable about the amount
you’re spending.
So here are some tips for scaling
down the spending without cheat
ing yourself on nutrition or flavor.
- Unless you truly love leftovers,
learn to cut recipes in half. Keep in
mind that some leftovers are bet
ter than others. A leftover piece
of chicken is likely to be eaten.
Leftover broccoli isn’t.
- Always freeze meat or poultry
in single servings, so that you can
defrost two pieces of chicken or one
beef patty - not the whole family
pack.
- Buy fresh produce in small
amounts, with good variety. Yes,,
you can buy one onion at a time, or
two zucchinis or just enough fresh
broccoli for one person. You can
also buy one banana, one apple,
and a half pound of grapes.
- Avoid casseroles that take a can
of this and a cup of that. They might
be a good economy for a big hungry
family, but they aren’t for one or
two. Try stir-fries instead, and cook
the amount that you want.
- If you’ve got to do big-batch
cooking now and then, like mak
ing a pot of chili, put sortie of it in
single-serving containers and pop
them into the freezer as soon as it
cools.
- If all the packages of meat,
chicken or fish in the store are
more than you really want, ask for
the amount you want.
- If there are prepared foods you
really enjoy and can buy in single
servings, splurge on a few. Knowing
you’ve got that single-serving pack
age of frozen lasagna that will be
ready in six minutes will make

The following small-scale recipes
are cooked in foil packets. These
can be put together quickly and put
into a hot oven. You get a home
cooked meal without messing up
pots and pans.
Beef Stew
Makes two servings.
If you want to use a cheaper cut
of beef, use tenderizer in advance.
2 sheets (12xl8-inches each)
heavy duty aluminum foil
1 pound boneless beef sirloin
steak, 1/2-inch thick, cut into bite
size pieces
1 cup baby carrots
1 Idaho baking potato peeled and
cut into bite size pieces
1 jar (12 oz.) beef gravy
2 tablespoons Worcestershire
Preheat oven to 450 degrees.
Combine beef with onion, carrots,

Tex-Mex Chicken
Makes two servings.
2 sheets (12xl8-inches each)
heavy-duty aluminum foil
2 boneless, skinless chicken
breast halves (4 to 6 oz. each)
1/2 cup salsa
1/2 package (from a 10 oz. pack
age) frozen whole kernel com.
Preheat oven to 450 degrees.
Center one chicken breast half on
each sheet of aluminum foil. Spoon
salsa over chicken. Top with com.
Double-fold top and ends to seal
packets. Bake 22 minutes on a
cookie sheet in oven

Pour into a greased 2-quart cas
serole. Bake for 45 minutes.
Spread with tomato sauce and
extra cheese. Bake another 15
minutes or until the cheese is
melted.
Tomato Sauce
3 tablespoons butter
1 large onion, finely diced
1 28-ounce can crushed toma
toes
1 teaspoon, dried basil (or 1
tablespoon fresh, chopped)
1 teaspoon garlic powder
salt and pepper to taste
Melt the butter in a heavy sauce
pan. Add the onions and saute
until they are soft and translu
cent. Add the tomatoes, basil
and garlic powder. Simmer over
very low heat for 45 minutes or
so. Season to taste with salt and
pepper.
Shrimp and Grits
5 cups of water
1 1/2 teaspoons salt
1 cup of grits (not quick grits)
1 tablespoon butter
1 medium onion, chopped
1 bell pepper, chopped
1 jalapeno pepper, chopped
1/2 pound center cut ham,
chopped
1 cup chicken stock
1 tablespoon all-purpose flour
1 pound frozen, cooked shrimp,
thawed, drained and tails
removed
salt and pepper to taste
crushed red pepper to taste
(optional)
Add the salt to the water and
bring to a boil. Stir in the grits.
Reduce heat and simmer, covered,
stirring occasionally, until grits
are creamy and soft, about 30
minutes. Keep warm.
While the grits are cooking,
melt the butter in a heavy skillet.
Saute the onion, bell pepper, jalap
eno pepper and ham in the butter
until the onions are translucent.
Add the chicken stock and sim
mer 5 minutes. Dissolve the flour
in a bit of water until smooth.
Stir into the skillet and heat until
the sauce is thickened. Add the
shrimp and simmer over very

you like your food really spicy, add
crushed red pepper.
Serve the shrimp sauce over the
grits.
Southern RatatouiHe
with Grilled Grits
This recipe always makes
me laugh. I wanted to try a
great-sounding recipe from the
Vegetarian Times. My husband
had most of the ingredients in the
vegetable garden, but he didn’t
have zucchini;
he had yellow squash. The
recipe also called for polenta, but
there was none in our small-town
grocery store so I substituted
grits!
4 servings cooked grits, chilled
2 bell peppers
2 yellow squash, sliced
1 medium eggplant, pared and
thickly sliced
2 small onions, halved
olive oil
2 tablespoons chopped fresh
basil
1 medium can diced tomatoes,
drained
1 medium can chick peas (gar
banzo beans), drained
garlic powder
salt & pepper
The night before or early in the
day: Prepare the grits according
to package directions. Spray a
loaf pan with cooking spray and
spread the grits over the bottom.
Chill.
For dinner: Start the grill.
When the coals have ashed over,
roast the peppers by placing them
on the grill and tumihg occa
sionally until the skin is charred.
Remove from the heat and cool.
Meanwhile, brush the eggplant,
squash and onions with olive oil.
Cook over coals until just done.
Remove from heat.
Cut the chilled grits into 4 or 5
pieces. Brush with olive oil. Grill,
turning frequently.
Peel and seed the peppers. (The
skin will come right off a roasted
pepper.) Cut into strips. Cut
other veggies into strips or cubes.
Toss the roasted veggies with the
tomatoes, chick peas and basil.
Season with garlic powder, salt
and pepper to taste. Add a bit
more olive oil if desired.
Serve with grilled grits.
