1 1/4 cup spaghetti
sauce
1 1/3 cup shredded
mozzarella cheese
Molten Lava Meatballs
You’ll need:
• 1 pound lean ground beef
• 4 crackers (any kind), finely crushed
• 1 tablespoon Italian seasoning
• 1/4 cup parmesan cheese
What to do:
1. Combine ground beef, cracker crumbs, Italian seasoning, parmesan cheese
and spaghetti sauce in a bowl.
2. Shape into 12 equal meatballs (approximately 2 tablespoons of mixture each).
3. Spray a shallow cooking pan with cooking spray and place meatballs 2 inches
apart. Press a clean finger into center of each meatball.
4. Place 1 teaspoon of mozzarella cheese deep in the hole.
5. Bake at 350 degrees for 20 to 25 minutes or until meatballs are fully cooked.
Makes 12 meatballs.

After a health scare, I hugged my wife and whispered, “If something
happens to me, the presents in my closet are yours.” She whispered
back, “If anything happens to you, everything in your closet is mine.”
Concerned that he might have put on a few pounds, my husband exited
the bathroom and asked, “Do you think my chin is getting fat?” I smiled
lovingly and replied, “Which one?”

came true. She walked into the grocery and found fresh eggs in cartons
of six. “I was so excited,” she told us later, “that I bought two!”
