Mama's
Cooking
With Mother’s Day having just passed, I would like to
reflect on Mama’s cooking. We all have our favorite meal
or dish that our mom has made for us. And all too often we
take it for granted.
I remember my mom’s batter fried cube steak, the batter
was better than KFC, Colonel Sanders would have loved
the recipe, for it was better than his. I have tried to recreate
the batter mix and have not been able to, so I guess it was
top secret. Or her hot potato salad, that was served hot and
was the last thing placed on the table before we ate.
The cabbage coleslaw with boiled eggs and black pepper
was a favorite of mine. But I guess my most favorite was
her sweet tea, it was made with real tea and sugar, lots of
sugar. It was always real smooth, served with ice and better
than any Coca Cola.
I say all this to make a point, I was blessed to have a
Mother that was also my Mama and my friend. I was very
blessed. I think today, most young people do not realize the
blessing that they have until it is too late.
So, to everyone who has their Mother, this is for you. Go
see her, call her, everyone has a cell phone, so there is no
excuse. Tell her that you love her, do not take it for granted,
I told my mom I loved her everyday.
Better yet, get up early on Sunday Morning, get dressed,
and show up to church, surprise your mom, sit with her, hug
her and make her proud.
For all of you who have your mom, “Don’t forget to call
your Mom and tell her you love her.” I and a lot of others,
wish we still could.
"BATTER FRIED” CUBED STEAK

INGREDIENTS
1 1/2 lbs cube steaks
1 cup all-purpose flour, plus
3 tablespoons all-purpose flour, divided
1 1/2 teaspoons salt, divided
1 1/4 teaspoons pepper, divided
1 teaspoon paprika
2 1/2 cups milk, divided
3 eggs, beaten
4 tablespoons oil
butter
DIRECTIONS
Place 1 cup flour, 1/2 cup milk, and eggs in 3 separate
shallow bowls in the working area.
Mix 1 tsp salt, 1 tsp pepper, and the paprika into the flour
and mix well.
Season both sides of cube steaks with additional salt and
pepper, if desired.
Dip cube steaks in milk, then dredge in seasoned flour.
Dip floured steaks in egg wash, then again in the seasoned
flour.
Heat 2 tbsp oil in a large skillet on medium heat and do
half the cube steaks at a time, or work with two skillets, if
you desire.
Brown the cube steaks on each side, about 8-10 minutes
total cooking time; remove from heat and set the steaks
aside.
Drain all but 1 tbsp oil (if any-1 don't usually have any,
but the steaks are less greasy with less oil) from the pans.
Add enough butter to the pan to equal 3 tbsp along with
the oil.
Melt the butter and add 3 tbsp flour and stir with a whisk
to make a roux, deglazing the bottom of the pan, and cook
for a few minutes on LOW heat; do not bum.
Slowly add the remaining 2 cups milk, and stir or whisk
constantly until mixture comes to a boil and thickens; cook
for another minute or so and remove from heat.
Serve Country Fried Steaks (Chicken Fried Steak, as we
call it) with plenty of gravy on top, and mashed potatoes
on the side (double gravy recipe if you use a LOT of gravy
on your potatoes, etc).

Students put on a show!

On Tuesday, May 23, 2023, the Historical Pal Theater in Millen was ringing again with
the sounds of music by writers such as, John Williams, Torence Williamson, Phillip Young and many more. Local
citizens filled the original seats of the Pal for a night of music and art.
The Jenkins County High School Band and Art Students put on a show like no other. James McBride, JCHS
Band Director picked the best music for their annual spring concert. Not to mention the music fit perfectly with
the art provided by the students of Callie Bailey, art teacher for Jenkins County High School.
Many first, second and even third place awards were given for art students that exibited the best in art. Natalie
Caldwell, won first place and best in show in the overall judging of art. “I enjoy art very much. Ms. Bailey is a
great teacher and has been a big influence on me and a big asset to the School.” stated Natalie. Ms. Caldwell is
now a graduating Senior, and is planning on working for the Center of Arts in the future. Other winners from
the show were, Water Colors Art, Archer Thigpen, first place, Natalie Caldwell, Second and Payge Ellison, third.
In Oil pastels art, the winners were, Natalie Caldwell, first place, Lizabelle Lacelle, second and Anna Rae Clark,
third. In Blind Contour art, we have, Lizabelle Lacelle, first place, Andrea Jeronimo-Jiminez, Second and Anna
Rae Clark, third. Every winner was given a ribbon of distinction.
The band performed many songs from days gone by and some from the present. The concert band consists of a
mix of High School and Middle School students. The beginning
of the show featured, the JCMHS Saxophone Quintet playing,
“Pirates of the Caribbean.”
And then the Jenkins County Beginning Band Plus , played,
“Follow the leader”, “Spring”, and the song, “Legacy”.
After an intermission with some snacks and time to search
the walls for that special piece of art from the JCHS Art
department, the JCMHS band continued the concert with the
songs such as, “Southampton”, “April”, “Journey Through
Darkness”, “Rampage”, and “Krypton Fanfare.” They ended
the concert with the “War Eagles Fight Song” written by Robert
Allen and AL Stillman. Everyone in attendance raised their
phone lights in celebration of the War Eagles.
Mandy Underwood, Director of the Jenkins County
Commerce, said , “this theater has been used often for local
band concerts, movies, tours and now we have the priviledge of
having art shows too. We have more plans for the Pal Theater
in coming months. It’s a good day for Jenkins County.”
The Jenkins County Times, Jenkins County’s new, #1 news

to The Pal as the paper will be the sponsor for most of the
events. Look out for some big “Pal Theater” news coming in
the next edition of The Jenkins County Times.
