Store
After a day of riding around Jenkins County, it is truly
amazing what you find.
In Herndon, Georgia (a little town near the river) I
stubbled across what was once a general store. This store
is located near the railroad tracks and not far from the
Ogeechee river.
It was built around 1890.
This particular area was a much busier place at one time.
Folks from all around Jenkins County would support
this large (for it's day) country store that was owned by
Robert C. Jones, a local farmer. It carried everything you
would need. Fresh Milk, eggs, bread, canned goods along
with a little hardware, farming goods and some feeds. It
was what we would call, "the walmart of it's day". The
store is still located in the same place and is owned by
descendents of the Jones family.
You see, Herndon was a thriving community in the late
1800's and had several stores, a cotton gin, a train depot,
a post office that was open from 1858 until 1971. Not to
mention many houses. Some of the houses still remain,
but some have been destroyed or tom down throughout
the years. Some houses are still there, but no one has
lived in them for many years. In the 1900's, Herndon
was reported to have a population of around 200. This
general store is a great part of history and still remains.
It is very interesting to visit. It seems to be used currently
for storage. The area around it seems to have grown up
in weeds and trees. However, it is not a issue to get to the
old stmcture.

Herndon, Georgia.

Babies!
Several months ago, we added to our mini farm by
hatching out fowl eggs. I have to admit I was somewhat
dubious when my husband procured Styrofoam incubators
to hatch out a menagerie of fowl including chickens, turkey
and ducks (my personal favorite). I did not anticipate
the complexity of the process including maintaining
appropriate temperature and humidity depending on
the species of the bird. Between me and you, I didn’t
really think the experiment would yield results but I was
mistaken!
To hatch duck eggs, you have to incubate the eggs for
twenty-eight (28) days at a temperature of ninety-nine and
one-half (99.5) degrees and humidity of fifty-five to sixty
(55 - 60)percent for the first twenty-five (25) days and
eighty to eight-five (80-85) percent for the final three (3)
days while they hatch. It just so happened, that “Due” Day
occurred when my husband was scheduled to work. As
I was packing his lunch (since the cafeteria wasn’t open
on the weekends), he stated “don’t worry, check on them
every couple of hours”.
Thirty minutes after he departed, I walked confidently
down to the shop in the drizzling rain where the incubators
were located. As I approached those incubators, not
expecting any results, I was shocked to find baby
hatchlings in various stages of egression from their shells.
I gingerly opened the lid to the incubator and delicately
scooped up each baby bird and transferred them to the
awaiting brooder pen which included warming lights,
medicated water and feed. As I replicated this action over
and over during that rainy Sunday, I was besieged with
apprehension -1 didn’t know anything about birthing bird
babies! I kept questioning my decision-making including
wondering if I had the incubator lid open too long or was
the temperature in the brooder pen staying constant? It
was the longest Sunday of my life! I raced back and forth
to the shop all day. Finally, twelve long hours later, I heard
the familiar sound of my husband’s truck pulling into the
driveway. With barely constrained excitement, I wrenched
open the door, and hurried him down to the shop to see all
of our bird babies. He reviewed my accomplishment and
said “Good Job”. What!?!?!?!? Was that it?!?!?! I didn’t
get any medals or certificates or flowers for being the birth
mother to nearly three dozen babies?
To my complete consternation, during the days and
weeks that followed, those little hatchlings fell in love
with my husband. When he walked into the shop, they
stood up on their little legs and watched him adoringly,
sometimes falling onto their backs in clumsy heaps until
he gently picked them back up. They chirped, quacked
and peeped at him in their own language but I know
they were saying “dada ”. My vision of baby ducklings
following me around the yard was quickly squelched.
They ran away every time I approached their pen. What
about IMPRINTING? I was the first thing they saw as
they came into the world but they lovingly quack at my
husband!
Months have passed and all our babies are adults living
on our mini-farm. In fact, they have even started laying
their own eggs! Here we go again!

Here are some nutritious breakfast recipes, from
our friends at the GA Peanut Commission, for the
kids to start back to school with.
Peanut Butter Sandwich Wraps
INGREDIENTS
2- 8 inch sandwich wraps
4 eggs
4 tbsp peanut butter
4 bacon slices
1/2 cup shredded cheese
cooking spray
INSTRUCTIONS
Spread 2 TBSP of peanut butter on one side of
each wrap.
Sprinkle half of the cheese on one half of each
wrap on the peanut butter side. In a small greased
skillet, scramble the eggs. Spread scrambled eggs
on top of the cheese on the wrap and sprinkle the
remaining cheese on top of the eggs. Top with 2
bacon slices. Roll up the wraps and put in a larger
greased skillet and brown on both sides. Slice in
half and serve.
Overnight Peanut Butter Oats
INGREDIENTS
1/3 cup greek yogurt
1/2 cup oats
2/3 cup milk
2 tbsp peanut butter
2 tsp brown sugar
1/4 tsp cinnamon
1/4 tsp vanilla extract
INSTRUCTIONS
Combine ingredients thoroughly, cover and
refrigerate overnight.
Overnight oats can be eaten cold or warmed in the
microwave for
30-60 seconds, stirring 2-3 times. Top with banana
slices, raisins, and maple syrup or honey to taste.
Get and Go Peanut Crunch Bar
INGREDIENTS
2 cups high fiber cereal
4 oz. peanut, dry roasted with salt, all types
1/4 cup cranberries, sweetened, dried
1/4 cup blueberries, dried
1/3 cup honey, strained or extracted
1/4 cup peanut butter, smooth
ltbsp brown sugar, packed
2 tbsp peanut flour defatted* (optional)
INSTRUCTIONS
Lightly spray an 8” baking sheet with non-stick
spray or line it with parchment paper. In a medium
bowl, mix cereal with peanuts, cranberries and
blueberries and set aside.
Next stir together honey, peanut butter, brown
sugar and peanut flour (if using) in a microwave
safe bowl.
Heat in 30 second increments, stirring in between,
until the mixture is combined and pourable. All at
once, add honey & peanut butter mixture to dry
ingredients, stirring quickly to combine.
Pour the mixture into the prepared pan, pressing
into the pan with a silicone or lightly oiled
spatula, and let cool completely.
Once bars are completely cool and set up, turn
out on a cutting board and cut into 12 equal sized
bars.
