Ingredients
2 tablespoons Olive Oil (30 ml)
3 cups Yellow Onion (diced,
432g)
4 teaspoons Fresh Garlic
(minced)
5 tablespoons Worcestershire
Sauce (75 ml)
1 tablespoon Ground Allspice
2 !4 teaspoons Salt
2 !4 teaspoons Liquid Smoke
2 teaspoons Hot Sauce (like
Tabasco)
1 !4 teaspoons Black Pepper
(freshly ground)
1 !4 cups Carolina Vinegar Style
Tangy BBQ Sauce (like Heinz,
354 ml)
1 !4 cups Carolina Mustard
Style BBQ Sauce (like Heinz,
354 ml)
1 pound Pulled Chicken (fresh
or frozen, 453g)
1 pound Pulled Pork (fresh or
frozen, 453g)
4 cups Low-Sodium Chicken
Stock (946 ml)
3 cups Chicken Drippings
(from two roasted chickens, fat
removed, or substitute with ad
ditional chicken stock, 709 ml)
48 ounces Tomatoes (canned
crushed, no salt added, 1.36 kg)
4 cups Vine Ripe Tomatoes (6
medium, 686g)
4 cups Yellow Com Kernels
(fresh or frozen, optional, 600g)
4 cups Baby Butter Beans (fresh
or frozen, 704g)
Lower the heat to medium-low
and stir in the first 6 spices. Let
cook for a few minutes, stirring
constantly, then add the two
BBQ sauces. Adding in the Meat
& Stock
Add in all the meat, and stir
well to coat the meat in the
spices and BBQ sauce. Cover
and cook for 10 minutes, stirring
occasionally. This step makes
the meat more flavorful.
Pour in the chicken stock
and drippings from the roasted
chicken. (If you don't have any
chicken drippings, just use ad
ditional chicken stock.) Mixing
in the Veggies
While the meat is simmering,
dice the fresh tomatoes.
Increase the heat to medium
high, then add the canned and
fresh tomatoes, com, and butter
beans to the stew. Cover and
bring to a boil, stirring every
few minutes to prevent the bot
tom from burning. This should
take about 15 minutes. Once it
starts to boil, stir and lower the
heat to medium-low, uncover,
and simmer for at least an hour.
I let mine simmer for 3 hours so
the flavors could meld and the
butter beans could soften.
Taste and adjust seasonings
as desired. Just note that this
recipe is on the upper end of the
mild range.
Serve immediately with
combread and sweet tea or
let it cool and refrigerate.

Dozier's HowAirFresheners
Can Affect Your
Pet's Health
As parents and caregivers, one
of the earliest lessons we leam
is the concept of “baby-proof
ing”—keeping
toxic substances
and dangerous
situations well out
of the way of our
children. As pet
parents, we need
to do the same.
But unlike chil
dren, instead of
this being a tem
porary obligation,
it’s something
we’ll need to do
throughout the
lives of our pets.
Some of the things we do to
improve our environment, such
as cleaning or using chemical
air fresheners, can pose dangers
to our animal friends, whether
furry, feathered, or scaled. So,
do pet owners need to forever
do away with their room sprays,
plug-ins, candles, oils, and sol
ids? That’s a question that’s not
so easily answered. However,
there are some ways to play it
safe when using these products
in the home.
“If we are putting some kind
of chemical into the air merely
to mask scents, then we have to
be concerned about the negative
implications for our pets,” says
holistic veterinarian Dr. Patrick
Mahaney.
Sadly, some forms of air fresh
eners can be quite toxic, espe
cially to animals. They might
ingest the substances.
The ingredients that makes
Air fresheners dangerous for
pets according to Dr. Mahaney,
one of the main
offenders in the
ingredient list for
most air freshen
ers are volatile
organic com
pounds (VOC).
VOCs are or
ganic chemicals
that have a high
vapor pressure
at room tempera
ture. This causes
these compounds
to easily turn
into gasses or va
pors from a solid or liquid form.
This transformation is called
volatility. In other words, vola
tility is just how air fresheners
are meant to behave: dissipate
into the air, thereby changing
its scent.
These substances can cause
a laundry list of maladies. Ac
cording to the Environmental
Protection Agency, the health
effects of VOCs may include:
- Eye, nose and throat irritation
- Headaches, loss of coordina
tion, lethargy and nausea
- Damage to liver, kidney and
central nervous system
And some VOCs can cause
cancer in animals; some are
suspected or known to cause
cancer in humans. It is safe to
say, pet parents should keep
all pets away from these toxic
sprays and cleaners.
