Here are a couple of easy
recipes with fruit flavored
twists, because—as y’all
have probably figured out
by now—cooking with fruits
is high on the list of things
my family enjoys. We hope
you will like these as much
as we do!
Baked Pork Chops
with Apples
4 pork chops (maybe %”
thick)
2 Tbsp oil
Salt & pepper
2 Tbsp brown sugar
1 Tbsp dried sage (or equiv
alent fresh)
2 Tbsp butter
1 Tbsp dried thyme (or
equivalent s)
Vi cup chicken stock
1/8 to 1/4 cup sherry or
cooking sherry
2 apples, sliced
Preheat oven to 400.
Rub chops with oil, then
coat evenly with mixture of
salt, pepper & brown sugar.
Preheat a large overproof
over medium high heat
with a bit of cooking oil in
it. Sear chops on one side
for two minutes, add sage
to the pan, then sear the
other side.
Add butter to pan, melt
& let brown a little. Add
chicken stock and sherry.
Mix well, add thyme. Bring
to a boil, add the sliced
apple.
Transfer skillet to the
oven and bake for 12 to 15
minutes.
(If you like a thicker sauce,
remove chops & keep
warm while bringing sauce
to a boil for a few minutes.)
Roasted Butternut
Squash & Apples
4 Tbsp melted butter
1 Vi lb butternut squash,
peeled, seeded & cut into 1
Vi” cubes
2 Granny Smith apples,
peeled & cut into 1 Vi”
cubes
Cinnamon
Honey
Preheat oven to 400.
Line a baking sheet with
foil & spread a layer of
butter evenly over it. Place
squash and apples in single
layer on sheet, drizzle with
remaining butter. Bake 20
minutes or so, until squash
and apples caramelize.
Place in serving bowl,
sprinkle with cinnamon and
drizzle with honey.
Apricot Glazed
Sweet Potatoes
2 large sweet potatoes,
peeled & cut into Vi' cubes
(about 6 cups)
Juice & zest of one orange
6 Tbsp butter
2/3 cup apricot preserves
Vi tsp nutmeg
1 tsp salt
2 Tbsp chopped parsley
Put sweet potato cubes in
microwave safe bowl with 2
Tbsp water; cover & micro-
wave for 8-10 minutes until
tender. Drain.
In small pan, mix Vi tsp
orange zest, 14 cup orange
juice, butter, preserves,
nutmeg & salt. Cook 5 to 7
minutes, stirring frequently,
until glaze is thick.
Toss potatoes with glaze;
top with parsley.

Trakr digs citizens out
of a fallen building
Meet Trakr. He is also a police dog and
a shepherd dog like last weeks heroic dog,
Rocky. He has longer hair though, and some
spots on his body are not covered in black hair
like Rocky. Can
you tell where on
Trakr and what
color these other
patches of hair
are? Trakr is fa
mous because he
spent hours dig
ging and helping
people out from
underneath a pair of buildings that had fallen
down on top of them in September, 2001.
Trakr used his paws to dig 30 feet down under
the ground to find the last living person left
behind; that means he dug the length of about
six grandpas (insert your family's pet name for
'gramps' here) standing on top of each other.

I will advocate for the county government to
modernize its policies and embrace new
technologies. I believe county government can
become more responsive to the citizens and
resolve the problems with roads and trash.
