Polish Pork Chops was a quick dinner favorite of my daughters when they were growing up, while the Cuban Roast Pork is something I learned to make when we lived in southwest Florida. (Don’t be put off by the list of ingredients or the directions because it really isn’t any more difficult or complicated than anything you already do.) Polish Pork Chops 3 1” thick pork chops or 6 smaller ones 1 tbsp butter salt/pepper to taste 1 tbsp finely chopped onion 1 tbsp fresh dill OR 1 tsp dill seeds 1 Vi cups sour cream Saute chops in butter until done. Season with salt and pepper, remove to a plate, sprinkle with the onions and keep warm. Add dill and sour cream to the pan, blend thoroughly. Heat but do not boil. Serve chops with sauce on top. Pam Jesion Cuban Roast Pork 4 or 5 pound pork shoulder or ham Mojo Sauce 2 c sour orange or fresh lime or lemon juice 1 large bay leaf 2 tsp dried oregano 2 tsp cumin powder 2 Tbsp salt and 1 teaspoon salt 1/2 tsp black pepper 20 cloves fresh garlic peeled 2 large onions sliced in thin rounds 1/2 c roast pork pan drip pings 1/2 c reserved Mojo THE NIGHT BEFORE: Make the mojo sauce. Poke pork all over, making deep stabs. Pour two tablespoons salt in hands, rub all over the pork, pushing it into the slits so it penetrates well into the meat Mojo Sauce Blend on high until liquified the juice, garlic cloves, bay leaf, cumin powder, oregano, pepper, 1 teaspoon salt. Re serve one cup of the mojo. Pour the rest of the mojo sauce over the pork, rub bing it deep into the meat holes/slits. Sprinkle a little more oregano, cumin, black pepper over the entire roast. Cover with foil and refriger ate overnight. THE NEXT DAY: Remove pork from the refrigerator; let stand for at least an hour before putting in oven pre heated to 325. (Do not cover with foil.) Depending on pork size, roast about 3 to 4 hours or a little more. (A 5 lb piece might take 5-6 hours.) Use a half cup of reserved mojo to baste your roast every hour. Roast is done when the juices run clear and the meat is tender. Pour drippings into a skillet over medium heat, add the onions and fry before add ing remaining half cup of reserved mojo to the onions, sauteing for about five-10 minutes. Slice roast, mix the mojo with onions well into the meat. Serve with black beans and white rice. Jess is broke, alone, just left her job, and her half-brother Ben didn’t sound happy when she asked if she could crash with him for a while in Paris. When she gets there, she finds his apartment is very nice, maybe too nice - but she can’t find him. To make things worse, his neighbors are odd sorts and not very friendly. The longer her brother is gone, the more worried she gets, and the more she wonders which of his neighbors knows far more than she does about how Ben can afford such a nice apartment, and where Ben is now.
