Mama Nell's Old Fashioned Raisin Pie
Here is one of my family favorites. I rarely made this pie. How
ever, it was a "special request" on several occasions during the
year. Not many folk like Raisin Pie, but give it a try...you will like
it. I will give you a hint: "Any pie always tastes better if cooled
on the window seal."
Ingredients:
2 cups Raisins
2 cups Water
!4 cup Brown Sugar
2 tablespoons Cornstarch
!4 teaspoon Ground Cinnamon
!4 teaspoon Salt
1 tablespoon Distilled White Vinegar
I tablespoon Butter
Combine raisins and water in a small saucepan. Boil 5 minutes.
Blend brown sugar, cornstarch, cinnamon, and salt together; add
to hot raisins. Cook and stir until syrup is clear. Remove from
heat, and stir in vinegar and butter or margarine. Cool slightly.
Turn tilling into a pastry lined pie pan. Cover with top crust. Seal
edges, and cut slits in the top crust.
Bake at 425 degrees F for 30 to 35 minutes. Cool in the window
seal until lightly warm.
Mama Nell's Delicious Dill Pickles
II cups Water
5 cups White Vinegar
1 cup Canning Salt
12 pounds - Pickling Cucumbers (quartered or halved lengthwise)
9 Dill Sprigs or heads
18 Garlic Cloves
18 Dried Hot Chilies (does not make them too hot)
In a stockpot, bring water, vinegar and salt to a boil; boil 10 min
utes. Pack cucumbers into nine hot quart jars within 1/2 in. of top.
Place one dill head, two garlic cloves and two peppers in each jar.
Carefully ladle hot mixture into jars, leaving 1/2-in. headspace..
Remove air bubbles and adjust headspace, if necessary, by add
ing hot mixture. Wipe rims. Center lids on jars; screw on bands
until fingertip tight.
Place jars into earner with simmering water, ensuring that they
are COMPLETELY covered with water. Bring to a boil; process
for 15 minutes. Remove jars and cool.

Kelsey, Lays on top
of her owner
In the same winter of
2017, a man slipped in
the snow in the frigid
Michigan wilderness and
broke his neck. As he lay
paralyzed, he believed
he was fated to freeze
to death. His golden re
triever, Kelsey, however,
was determined to save
him. Kelsey lay on top
of her owner to keep him warm for a full 19 hours, bark
ing incessantly until help arrived, long after her owner lost
consciousness. Super job Kelsey!
