Nell's VINEGAR PIE
Now, some of you are going to turn your noses up at this
recipe. However, this is one
of my families favorite pies. Give it a try. I promise, it will
go over well. Your family will
ask for more!
Ingredients
4 eggs
1 1/2 cups white sugar
1/2 cup butter or margarine, or 8
tablespoons or 1 stick, melted
2 tablespoons apple cider vinegar
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1 1/2 teaspoons vanilla extract
Combine all ingredients and mix well with mixer. Pour
into uncooked pie shell and bake in preheated 425 degree
oven for 25 minutes. Let cool before cutting. Note: This
pie will look like it is not done after 25 minutes. It puffs
up during cooking and will kind of fall once you take it
from the oven. I promise you will be making this pie for
years to come!
Country Stuffed Bell Peppers
Oven baked bell peppers stuffed with goodness can be a
complete meal. This is one of my most favorite vegetable
recipes. Ring the bell on this recipe and they will come
running!
You could either use green, orange, red or yellow bell
peppers for this recipe. During the summer months, I
usually will use a variety of colors because they make a
colorful dish.
Recipe Ingredients:
6 large bell peppers (green, orange, red or yellow)
1 pound ground beef
1 small onion, finely chopped
2 garlic cloves, minced
1 small can sweet com, drained (8 ounce)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon thyme
3 cups long-grain cooked rice
2 cups tomato juice
shredded cheese
Recipe Instmctions:
Preheat oven to 350 degrees Fahrenheit.
Prepare bell peppers for baking by cutting off the tops and
removing the spines and seeds. The peppers need to be
softened before baking. Softening of the peppers can be
accomplished in one of two ways: 1) Steam the bell pepper
on a wire rack above water for 10 to 15 minutes 2) Or
cover the bell peppers with water and boil for 3 minutes.
After softening process set bell peppers aside.
In a large skillet over medium-high heat, stir and cook
ground beef until it is browned. Be sure to separate beef
into small pieces while stirring. Next add onions and garlic
cloves, stir and cook for an additional 3 minutes.
Remove skillet from heat. Stir in sweet com, salt, pepper,
thyme, cooked rice and 1 cup tomato juice. Mix all
ingredients well, then stuff mixture into peppers.
Place stuffed bell peppers upright into shallow baking
dish and add the remaining tomato juice. Cover with
aluminum foil and bake stuffed bell peppers at 350 degrees
Fahrenheit for 35 minutes. Remove foil, add cheese
topping and bake an additional 5 to 10 minutes, until
cheese melts.
Spoon the remaining tomato juice from the baking dish
over the stuffed bell peppers and serve hot.

Little Joe of the New
Jersey “Yorkies”
Little Joe is not really so little at all. He is average size
for his breed and has a hero-sized heart. Little Joe and
other dogs like him are called Yorkshire terriers or,
"Yorkies" for short, and they usually are kept as pets,
as friends or companions, or as show dogs. Show dogs
perform for a living, sometimes they compete in beauty
pageants and play
sports, and sometimes
they act in movies and
TV commercials. Little
Joe was definitely not
trained to fend off a
100 pound black bear
that had wandered
onto owner Deborah
Epstein's New Jersey
property in Summer,
2003, but he did. Way to go Little Joe!

Kemp extends Georgia
gas tax break

Gov. Brian Kemp on Friday
extended Georgia’s gas tax
holiday through August 13.
The General Assembly
suspended the fuel tax in
March as inflation began
raising pump prices above
$4 a gallon. Kemp extended
that break in May and again
on Friday.
The state gas tax is around
29 cents per gallon.
Kemp also suspended the
state sales tax on locomotive
fuel, which he said would
help fight rising consumer
costs.
"I am committed to fighting
to ease the economic burden
hardworking Georgians are
facing due to disastrous
policies from Washington
politicians,"
Kemp said.
Kemp said
President
Joe Biden’s
administration
had not done
enough to combat inflation
and rising fuel prices.
In June, Biden called on
Congress to suspend the
federal gas tax (18 cents
per gallon) until the end of
September.
Biden has also ordered
releases of oil from the
Strategic Petroleum
Reserve, the nation’s
emergency oil stockpile.
Georgia’s gas prices are
about 50 cents below the
national average, according
to AAA.
On Friday, Kemp also
extended an April executive
order declaring a state of
emergency in Georgia due
related to supply chain
disruptions. The order
prohibits price gouging
by gas station operators
and relaxes some rules on
commercial trucking in
Georgia.
Kemp extended that
executive order until
August 13.
