“Great Recipes of the South”
These are recipes from my Grandmother, Nell Eades.
I cherish her recipe book with all my heart. She was very
special to me and the family. Hope you enjoy these as
much as she did baking them for our family.

Hey Ya'll, I thought I would share some of my
Grandmother's favorite recipes that she would cook during
wartime. Most of these recipes are quick and easy to make.
As you would think, she would make delicious meals out
of what they had. Everything was scarce at that time. My
family loved these two recipes to this day and I sure hope
you do too.
WARTIME Gingerbread
Ingredients:
1 cup molasses
2 cups flour
2 teaspoons baking soda
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons butter
Very hot water
Directions:
Mix molasses and flour.
Put soda, ginger, cinnamon, salt and butter in measuring
cup and fill with very hot water.
Add to flour mixture gradually.
Bake very slowly at 300 in a loaf pan.
WARTIME Meat and Potato Patties
This is one of those recipes that worked well for our
family of 10. (Yes! 7 kids and 3 adults) May I suggest
delicious brussel sprouts or lima beans as a side. I expect
your family will love this dish and ask for seconds too!

Ingredients
3/4 pound lean ground beef (90% lean)
3/4 cup finely shredded potatoes
1/4 cup finely chopped onion
2 tablespoons chopped green pepper ^
1 large egg, beaten
1/4 teaspoon salt
1 tablespoon canola oil
1 cup tomato juice
1 tablespoon all-purpose flour
1/4 cup water
Directions
Combine the first 6 ingredients. Shape into 4 patties; press
to flatten slightly. In a large skillet, heat oil over medium-
high heat. Brown patties on both sides; drain. Add tomato
juice. Simmer, covered, until a thermometer inserted into
meat reads 160°, 20-25 minutes. Remove patties to a
serving platter; keep warm.
Whisk flour into water; gradually add to skillet. Reduce
heat to medium-low; cook, stirring constantly, until
thickened. Spoon over patties. Serve immediately.

fans for a 1940’s revival.
“A Man Called Peter”
took to the pulpit, the
biography written about
Reverend Peter Marshall
by his widow, Catherine
Marshall. Immigrating
from Scotland, Marshall
began his pastoring in
a small rural church in
Covington, Georgia, but
quickly moved to a larger
congregation in Atlanta.
His love of God and
compelling sermons had
people standing in line
to hear him preach and
eventually led him to New
York Street Presbyterian
Church in Washington,
DC. While there, the
Senate called him to
service where his prayers
and influence reached
lawmakers across the
country.
Brenda Griner chose
the 1951 book from her
reading archive. The
faith and journey of the
Scottish preacher, from
the mines of his homeland
to the chaplaincy of the
U.S. Senate, stayed with
her through the years.

Catherine Marshall’s
successful writing career
which launched because
of her husband’s death and
its unlikeliness, had he
lived. The 1940’s church
was contrasted to 2022’s
congregations. In closing,
period hats and purses
were donned for a group
photo to give a nod to a
life well spent. Hats off to
Peter!

Shana, the She Wolf
Wolves are wild dogs that nobody keeps as pets
and that live outside of cities and away from
people because they can be dangerous and
mean. The very first dog a person ever kept as
a pet or that ever became friends with a person
was a baby wolf. This German Shepherd, wolf
mix amazed upstate New York firefighters who
arrived at Eve and Norman Fertig’s home to
find their Shana had dug a 20 ft. tunnel from the
couple’s home to where they had been trapped
outside in a snowstorm by fallen trees and
had dragged
the elderly
Fertigs back
to the warmth
of their house,
sustaining
serious injury
to her paws in
the process.
