Chicken Ritz
4 cups cooked, diced chicken breasts
2 cans cream of chicken soup
3 cups Ritz crackers, crushed
2 sticks melted butter
8 oz sour cream
Place chicken in bottom of 9x13 dish. Mix soup and sour
cream together and pour over chicken. Mix melted butter
and Ritz together and sprinkle crackers on top and bake at
350 for 40 minutes.
(Please note that this recipe is borrowed from a friend,
but it is so delicious)
Apricot Nectar Cake
1 box pineapple cake mix
1/2 cup sugar
1 cup apricot nectar
1/2 cup vegetable oil
4 eggs, beaten
Mix all ingredients well. Bake in well-greased tube pan at
350 for 45 to 55 minutes.
Icing
1 cup confectioners’ sugar
2 Tbs real lemon
Mix well and pour over warm cake.
Una’s Layered Salad
1 head lettuce, chopped
1/2 cup chopped green onions
1 cup chopped celery
8 oz. can water chestnuts, drained
10 oz. pkg frozen petit pois peas, thawed
1/2 cup sliced fresh mushrooms
2 cups salad dressing
2 Tbs. sugar
1/2 tsp. garlic powder
1 tsp. Season salt
3 hardboiled eggs, chopped
1/2 lb. fried bacon, crumbled
Parmesan cheese
Layer first six ingredients (in the order they are listed) into
a 9x13 dish. Spread salad dressing on mixture. Mix sugar,
salt, garlic powder and sprinkle over salad dressing; then
add Parmesan cheese on top. Cover and refrigerate at least
4 hours, up to 2 days. Just before serving, sprinkle eggs and
bacon over top of salad.
NOTE: always dip to the bottom of dish for each serving.

Toby Parkhurst:
EMT, Hero, Dog
Toby is another golden retriever who saved the day,
back in 2007, by jumping onto Calvert, Maryland
resident and owner Debbie Parkhurst's chest to
dislodge the food she was choking on when Toby
noticed Parkhurst was having trouble doing so on
her own. Not only is this type of dog often owned
by people who need a little extra help, but Golden
Retrievers are also taken to hospitals and places where
people who are sick or sad live because they are so
nice and wami and fuzzy, they make sick and sad
people feel better. What a Super Job Toby!

Want to come to the library? You can! We have limited library services, from 9 am until 6 pm,
Monday through Friday, at Ogeechee Tech Sylvania, across the street from the library! We also have
a limited number of hooks available in the building, hut if you want something that isn’t at OTC we
will he happy to go get the items from the library building.
It’s the last full week of Summer Reading! The reading portion of our program ends on Saturday, July
23. If you or your kids have won a weekly drawing, or if they’ve earned prizes, make sure to come
pick them up on or before Saturday, July 30! And yes, those of you who have been keeping track of
your time and hooks read on Beanstack are eligible to win real physical prizes as well as winning all
the fun challenges available on the app.
Ready for school? Your child will find all sorts of resources at the library, plus internet access, wifi,
and research help from our friendly staff! From hooks about famous historical figures to the amazing
databases of GAFIFEO that cover topics ranging from Georgia’s geography to medicine to Consumer
Reports’ buying guides for that new laptop they need, plus the Fibby and eRead Kids services that
allow kids to download hooks and audiohooks right onto their cellphones, you’ll he amazed what the
library has to offer!

The Screven County Fibrary Board of Trustees will meet at OTC on Thursday, July 21 at 4 pm. The
Screven-Jenkins Regional Fibrary Board will meet at 4 pm on Thursday, July 28 at the Jenkins County
Memorial Fibrary.

gives him a chance to escape the crime-ridden trailer park he’s growing up in, hut that would mean
leaving his family behind and risking his younger brother being lost to the world of drug dealing. Should
