The school bells are ringing once again and if your kids
are anything like mine, then the best part of their day is
lunchtime! There is one dish my daughter begs for in her
lunchbox and that is Sausage Stuffed Zucchini Boats. This
savory meal has tender zucchini, filled with creamy garlic
& herbs, then blended with sausage and a delicious filling
that will have your kids thinking you have made the grade
on packing their school lunch.
Items needed:
6 medium Zucchini
1 Tablespoon Olive Oil
1/3 cup finely diced Onion
1 pound ground Jimmy Dean Regular Sausage
1 (5.2-ounce) package Boursin Garlic & Herb Cream
Cheese (room temp)
1/2 cup Plain Breadcrumbs
1/4 cup Beef Broth
1 teaspoon Italian Seasoning
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 cup shredded Mozzarella Cheese
Non-Stick Cooking Spray
Bring a large pot of water to a boil over medium-high heat.
Once boiling, add the zucchini and cook for 10 minutes,
then drain in a colander and set aside to let cool. Lay out
paper towels and once the zucchini has cooled, cut the tops
of each zucchini and then cut in half lengthwise. Using a
teaspoon, carefully remove the seeds and pulp to hollow out,
leaving a little amount of the border, then turn over on the
paper towels to drain any excess water. Repeat this process
with the remaining zucchini. While the zucchini drains on
the paper towels, preheat oven to 350 degrees. Add olive oil
to a large skillet and turn to medium heat. Once hot, saute
onion for 1 Vi minutes. Add the sausage and cook until no
longer pink, then add the softened cream cheese and stir into
meat until everything is creamy and combined. Remove
from heat and add sausage mixture to a large mixing bowl
along with the breadcrumbs, beef broth, Italian seasoning.

Dog gets help for
OWNER SUFFERING
FROM A STROKE
Eighty-six-year-old Rudy Armstrong, a Navy
veteran, was alone on his houseboat when he
suffered from a stroke. Realizing he could not
reach his phone, he yelled to his Chihuahua,
Boo Boo, "go get help." Boo Boo then ran
out of the houseboat and came back with the
dockmaster, who then called the paramedics
who took Armstrong to the hospital. Armstrong
and Boo Boo were reunited five days later after
Rudy was released from the hospital. Way to Go
Boo Boo!!

Neighbors, our days
are filled with so many
important things.
The to-do list always
seems a bit too long
and there is never
enough time to get
everything done. This
lack of time makes
me wonder about the
items we never get
to on our list. What
are the things, day
after day, we push
off until tomorrow?
Why do those items
at the very bottom of
the list never seem
to get scratched off?
What is down there at
the seldom regarded
bottom of the list? I
would bet exercise is
theoretically at the top
but in reality, closer to
the bottom. Other items
like cleaning out the
fridge probably seldom
make it off the bottom, I
think. There are so many
things we inevitably
need to put off to another
day. Along this line of
thought, somewhere,
often forgotten, in the
dark depth of our list
is sleeping. Sleeping is
something so common
place we rarely give
it much thought.
Although, considering
we spend a third of our
lives asleep, one might
think it deserves a little
more importance. At
least a little higher on
the to-do list than taking
out the trash. Well, the
verdict is in on sleeping,
it matters. In every study
where Group A gets
plenty sleep and Group B
does not, Group A always
has less chronic illness
on average while Group
B on average struggles
more to succeed. Sleep
really is a kind of human
Secret Sauce for just
being a little better. With
all that being said, why
do we all struggle to get
a decent night’s sleep?
I’ll offer a thought and
two suggestions. First,
imagine it’s 100 years
ago, its night, you’re
on the moon looking at
