“Great Recipes of the South”
Creamy sweet potatoes topped with brown sugar and pecans
Here is one of the families favorite recipes. Sweet potatoes with brown sugar and pecans.
We grew our own pecans and sweet potatoes, and they are delicious. I know your family
will love these just as much as my family did. This is perfect for Thanksgiving! Enjoy!
Ingredients
40 ounces canned or fresh Sweet Potatoes
(cooked, drained)
1 Egg
% cup Sugar
Vi stick Butter
'A cup Milk
2 teaspoons Cinnamon
1 teaspoon Allspice
1 teaspoon Baking Powder
Vi teaspoon Salt
1 cup Brown Sugar
'A cup Plain Flour
/} cup Butter
1 cup Pecans (chopped)
Topping Mix
1 cup brown sugar
/} cup all-purpose flour
/} cup butter, softened
1 cup chopped pecans
Start by preheating your oven to 350° Fahrenheit. Spray a casserole dish with non-stick
spray.
While the oven is heating, mix all of the ingredients for the sweet potato base - a large
can of cooked sweet potatoes (or peeled fresh sweet potatoes), egg, sugar, butter, milk,
cinnamon, spices, baking powder, and salt. Puree the ingredients together.
Pour the sweet potato base into the prepared casserole dish and even it out.
Take the ingredients for the topping - brown sugar, all-purpose flour, softened butter, and
chopped tiny pecans - and place them in a large mixing bowl. Using two forks, blend the
butter into the ingredients until it is coarse and crumbly. Sprinkle the crumb mixture on top
of the sweet potato base. Bake the casserole for 45 minutes to an hour until it is no longer
“jiggly” in the center. It will firm a little bit once it is taken out of the oven and cools.

Neighbors, the Monday night quest for sweets has me
thinking about all those feet pounding the pavement. I
know many of you spend some very long hours on your
feet. Our feet are one of those things we just need to be
dependable but when they are out of commission, we are
too. When it come to new foot troubles, it seems there are
often two guilty parties.
The most common I think is the overuse injury. Every
tendon, ligament, muscle and bursa is able to hold up to a
certain amount of stress and strain. Our body is adaptable
but not quickly. Typically, our body is well adapted to
our everyday physical activity. Trouble often starts when
we take on something new. It is like clockwork at the
6-week mark of the new physically demanding job or new
exercise commitment that a hurt sets into the foot leaving
someone miserable. The tendons and ligaments can
become inflamed and swollen. It is not that the body is not
up for the challenge but sudden large changes in workload
without an adequate rest/recovery period prevents the
body from adapting and strengthening itself. All work and
no rest keep the foot stuck in a chronically inflamed and
painful state.
The second common stumbling block is shoes hurting
instead of helping. A helpful shoe supports the arch.
Most shoes have a mild to modest arch support which is
adequate for some feet; however, if you’re going to be
on your feet all day then any lack of support will take its
toll. It is important to pay attention to shoes when you
purchase a new pair.
Helpful shoes provide some elevation in the heel.
Lifting the heel reduces tendon strain in the back and
bottom of the foot. However too much heel elevation
and the forefoot carry more weight and stress. Another
helpful shoe element is ample room in the toe box. Giving
the toes room to move allows natural movement without
strain or blistering.
Sore feet are no fun. I hope keeping a lookout, for these
common troubles will help put you a step in the right
direction!
