Asparagus Casserole
2 cans asparagus, drained
4 boiled eggs, sliced
2 cups shredded sharp cheddar cheese
1 can cream of mushroom soup
1/2 cup salad dressing, or mayonnaise
1 1/2 cup cups crushed Ritz crackers
Butter a 9x13 pan and sprinkle half the crackers in pan. Place asparagus on top of crumbs and boiled
eggs on top of asparagus. Sprinkle cheese over eggs. Mix soup and salad dressing together and
spread on top of cheese. To finish off the casserole, sprinkle the other half of cracker crumbs over
the top. Bake in preheated oven at 350 for 30 minutes, or until brown.
Depression Cornbread
2 cups self-rising white com meal
1 tsp baking powder
Pinch baking soda and salt
3 Tbs bacon grease
1 cup buttermilk
Round iron skillet
Mix dry ingredients. Pour in buttermilk and 1 Tbs of the bacon grease. To prepare your skillet, heat
the other 2 Tbs bacon grease in skillet until very hot, almost smoking. Pour commeal mixture into
skillet and bake at 425 for 20-25 minutes, or until golden brown!
NOTE: Sometimes I add a little extra bacon grease by putting 3 Tbs in hot skillet and 2 Tbs in the
batter. It may be a little greasy, but just don’t tell your grandchildren.
Strawberry Trifle
1 store bought Angel food cake
16 oz Cool Whip
8 oz cream cheese, softened
1 can sweetened condensed milk
1 can strawberry pie filling
Mix cream cheese, condensed milk and Cool Whip together. In a large
bowl, crumble 1/2 of the cake. Pour 1/2 of the cream cheese mixture
over the cake. Then spread 3/4 of the pie filling over the cream cheese
mixture. Repeat layers (top of trifle will be covered with remaining 1/4 of the pie filling). Chill until
ready to serve.

“COPD Awareness Month”
Neighbors, November is COPD awareness
month and I would like to share a few thoughts
about COPD and lung cancer screening. First
many may not know but you don’t have to be
a smoker to get COPD. Long term exposure
to air pollution, fumes, chemicals, dust and
secondhand smoke are other risk factors
associated with COPD. The more exposure we
have the faster our lungs age although due to
genetics, some lungs are more susceptible than
others. Second there is no cure for COPD but
only treatment to help the damaged lung work a
little better. This brings me to one of my favorite
metaphors. The lungs are like a bank account
that is only filled once in a lifetime and every year
of life reduces what is in the bank. Taking care of
ourselves causes less to be withdrawn. Smoking
however, burns through what is available much
quicker. The trouble is once it is gone there is no
way to put it back. We are all guilty of putting
off what is not an immediate problem today
until tomorrow and that’s often the case with
quitting smoking. “I want to quit but Fve got
too many other things to worry about.” All of the
organs of our body have a reserve which means
that during every day life we only use a small
portion of what each part can do. The kidney is
filtering at 100% but it only takes about 15% to
feel normal. Walking around the store probably
only needs 30% of what the heart and lungs can
do. As smoking uses up more of the reserves
every year, people are able to do less and less
until there is just enough to get by. Waiting
to quit until you feel limited means you have
already use up a good bit of lungs at that point.

NOW to get some information and resources.
Additionallyforthosewho smoke or have quitin
the past 15 years and are between 50 and 80 you
may qualify for lung cancer screening. Finding
lung cancer early makes all the difference in the
world as the chance for a cure is much greater.
