It has been looking like
the frigid cold winter weather
is just about over, and then I
see a weather forecaster post
on Facebook that states that
there is a chance of snow for
us on Friday. I really don’t
think that will happen, but all
of my flowers in pots will be
covered, just in case. I don’t
want to see the children hav
ing to wear winter coats to
look for Easter eggs. The
pollen has caused problems
for me this year, and I am
hoping that it will soon be on
the decline. As much as I love
to work on the flowers, I
dread seeing the hot, humid
weather that summer brings.
This week I would like to
share a recipe for a wonderful
enchilada casserole. If it is
not spicy enough for you, you
can always add some peppers
to heat it up a bit. The recipe
for the oatmeal bars in one of
my favorites, and I always try
to cook them at a time that
they can be served warm.
EASY ENCHILADA
CASSEROLE
2 pounds lean ground beef
1 stick margarine
1 small onion, chopped
1 (10 V4-ounce) can cream of
mushroom soup
1 (10 V4-ounce) can cream of
chicken soup
1 (8-ounce) can taco sauce
1 (15-ounce) can enchilada
sauce
2 cups cheddar cheese, grated
1 package corn tortillas
Brown ground beef; drain.
Saute onion in the margarine.
Add soups and sauces to the
onion and meat mixture.
Layer the meat mixture and
tortillas in a large casserole (9
x 13-inch pan) and top with
grated cheese. Bake at 350
degrees for about 30 minutes.
CHERRY CHOCOLATE
OATMEAL BARS
1 (8-ounce) can refrigerated
crescent rolls
1 (5-ounce) package dried
cherries, chopped
1 bar (4-ounce) Ghirardelli
semi-sweet chocolate,
chopped
1 cup lightly toasted pecans
1 cup quick oats
1 can sweetened condensed
milk
2 eggs
2 tablespoons plain flour
Separate crescent rolls
and press into bottom and
sides of a 9 x 13 x 2-inch pan,
sealing all perforations.
Sprinkle bottom with
cherries, chocolate, and
toasted pecans. Cover with
oats. Whisk together sweet
ened condensed milk, two
eggs, and flour; pour over
ingredients in pan. Bake at
350 degrees for 30 to 40 mi
nutes or until the middle is
set. Heavenly when served
slightly warm.

Coming 2 America Dedicated in Nelson’s Memory
Nearly two years after the pass
ing of Ryan Nelson, his family was
shocked when they saw the credits
of Coming 2 America, the project
Nelson last contributed to, which
was dedicated in his honor. Nel
son, who had an “incredible heart
and love for people,” will forever
be remembered for his impact.
Nelson moved to The Rock
Ranch in 1989 with his parents
Rob and Rosemary Nelson, who
served as foster parents at the
ranch for many years, allowing
Nelson to gain “a new life in a big
family with what would become
his many beloved brothers and
sisters,” commented Rob Nelson.
With a love for drama and the
atre, Nelson dreamed of working
in the movie industry from a
young age. After graduating from
Upson Lee High in 2004, Nelson
attended Gordon College before
entering the workforce in 2006.
Nelson spent several years work
ing locally with children and later
moved to Atlanta, working in the
restaurant business, as well as
providing home health care for the
elderly.
After spending six years in At
lanta, Nelson was given the oppor
tunity to work for two weeks in the
locations department of a film
series. This began a full-time ca
reer in the industry and Nelson
worked in a variety of studios in
the Atlanta area and on numerous
shows from 2015 until his passing
in 2019.
Nelson’s greatest joy in the
business came from a two-year
stint on the set of Avengers
movies, including Infinity Wars
and Endgame, allowing Nelson to
“rub shoulders” with some of the
biggest names in the industry.
With a crew “that became
family to him,” Nelson found him
self working on the set of Coming
2 America, a 2021 Amazon Origi
nal comedy movie starring Eddie
Murphy, which was released on
March 5. Nelson served behind the
scenes in the making of the film
and “truly impacted every person
he met with his beaming smile and
authentic love for people,” com
mented Rob Nelson. “He had a gift
of bringing life and a sense of
value and purpose to all he met,
and that reality became evident in
the release of Coming 2 America.”
Ryan Nelson was on his way to
the set of Coming 2 America in late
2019 when he passed away in an
automobile accident, just days
after film shooting wrapped up.
Rob and Rosemary Nelson sat
down to watch Coming 2 America,
nearly two years after the passing
of their son, and rushed to scroll to
the end credits. As hoped for,
Ryan was listed for his work in the
movie credits, but The Nelsons
had no idea that film producers
and the crew had dedicated the
movie in memory of their son.
Ryan Nelson’s legacy forever
shines, not only through those
whose lives he has touched, but
forever on the big screen. Seen
hanging on the wall of Nelson’s
apartment was a Bible verse he
had handwritten on paper: “All the
ways of a man are pure in his own
eyes, but the Lord weighs the
spirits (the thoughts and intents of
the heart). Roll your works on to
the Lord [commit and trust them
wholly to Him; He will cause your
thoughts to become agreeable to
His will, and] so shall your plans
be established and succeed.”
(Proverbs 16: 2-3).
