This week I would like share,
once again, Linda Riggins’s grand
mother Moulton’s recipe for sweet
pickles. This is the best recipe that
I have ever used, and these pickles
make the best chicken salad ever.
The time format is perfect so that
you can get them done by the end
of the last day.
I use a five-gallon bucket for
the lime soak, and Linda used a
large ice chest. At the end, I always
use the FDA instructions and use a
hot water bath per their instruc
tions. I have a Ball book for can
ning; but, if you do not have one,
you can read the instructions on
the University of Georgia’s website.

MOULTON’S
CUCUMBER PTCKT.ES
1 cup pickling lime
7 pounds young, tender cucumbers
5 pounds Dixie Crystals granulated
sugar
2 quarts White Oaks apple cider
vinegar
1 package Durkee pickling spices
(pick out and discard the red
pepper)
1 teaspoon salt
3 medium onions, sliced
Cucumber preparation
1. Tie the spices up in a white
cloth, new handkerchief works
well, not allowing the spices to es
cape-only the flavor
2. Add the lime to the one gal
lon of cold water
3. Slice or cube the cucumbers
4. Soak cucumbers in the lime
water for 24 hours
5. Wash cucumbers and place
in clear water
6. Repeat #5 every hour for
four hours

r. Prepare jars, lids, and rings
(wash and heat to boiling)
2. In large pot ( not alumi
num), combine vinegar, sugar, and
salt
3. Drop in the spice bag
4. Bring to a full boil
5. Add cucumbers
6. Cook gently for 45 minutes
7. Add sliced onions
8. Cook gently for t5 minutes
9. Immediately pour into jars,
leaving r-inch head space
Do not move jars for 24 hours,
assuring a solid seal.
So that you won’t be up during
the night to finish and clean up, I
recommend starting the 24-hour
soaking period at least by 10 a.m.
on the first day. This timeframe
should explain why.

boiling. Add cucumbers and follow
the recipe

4:46 start cooking supper...
you know the rest.
These are hands-down the best
pickles I have ever made, and the
cucumbers should be getting ripe
soon.

Bridges Promotes Local Special Olympics
Through Eagle Scout Project

Recent high school graduate Everette Rhett
Bridges, a member of Troop 25 Boy Scouts in Thom-
aston, decided to make a video presentation for his
Eagle Scout project to bring inspiration to others, in
an effort to create a local Special Olympics.
Bridges, who was born with down syndrome,
brings awareness through his video, to the impor
tance of having a Special Olympics program, while
sharing photos and videos of Bridges, along with
family and friends, participating in athletic programs.
According to his research:
“Special Olympics contributes to the physical, so
cial, and psychological development of all people with
intellectual disabilities, regardless of age. With par
ticipation in Special Olympics, individuals with intel
lectual disabilities can find joy, acceptance, pride,
leadership, and success. Participants in the Special
Olympics hold various jobs, go to school, and are ac
tive in difference functions within the community.
Special Olympics helps individuals with intellectual
disabilities exercise their skills in hopes of a more wel
coming future and improvements in their quality of
life.
“This is obtained by implementing inclusive
sports, inclusive youth leadership opportunities, and
home-school engagement. Local surrounding
counties all currently participate in Special Olympics.
Within the Thomaston-Upson community, there’s an
ongoing population of individuals with some type of
intellectual or developmental disability. By bringing
the Special Olympics to Upson County, these individ
uals will be given the opportunity to participate and
be included in different athletic events, as well as lead
ership opportunities.
“Everyone deserves the chance to reach their high
est potential, everyone deserves a chance to be in
cluded, and everyone deserves a chance to play.”
After sharing the video with a few friends via
email, Rhett’s mother, Sabrina Bridges, says that the
narration for the video was recorded by Reece Pasley
and his mother Kristen Pasley shared the video on
Facebook. As of Monday evening, the video had more
than 2,000 engagements on Facebook and many have
reached out to offer help.
Sabrina says they are in the process of gathering
information for what it would take to get the Special
Olympics started locally. “Interested parties are more
than welcome to send me their info and I will keep a
running list so that when the time comes, I can call
on them,” commented Sabrina, who can be reached
through Facebook.
Bridges tells the Upson Beacon that his three main
goals were to complete his Eagle Scout project, raise
awareness on “how badly Upson County needs Spe
cial Olympics,” and to get it started locally.
So far, two of Rhett’s goals have been met and he,
along with his family, says “we could not be more
thankful... So come on Upson, and let’s get this done.”
