To prevent any possible cross-con tamination, raw animal foods are to be stored according to final cook temperatures with raw animal food requiring the highest final cook tem perature (chicken) below all others. Ready-to-eat foods should be stored above all raw animal foods. COS: Containers of chicken moved to low est shelf in both coolers, eggs moved shelf below hot dogs, gyro slices/hot dogs moved above all raw animal foods in 2-door reach-in cooler. Several knives and vegetable peeler stored on knife magnet above 3-compart- ment sink with dried food debris on all blades. After cleaning and sanitizing, check for cleanliness before storage. COS: Knives/peeler removed from magnetic rack and taken to 3-compartment sink for re-cleaning and sanitizing. Knife magnet cleaned and sanitized. Wing sauce containers, under grill, not cleaned and sanitized after use yesterday. Per cook, con tainers were last cleaned and sanitized 4 days pre vious. Food contact sur faces need to be cleaned and sanitized every 4 hours of use. Microwave with large build-up of debris inside -clean and sanitize frequently to pre vent build-up that can fall into food while heating. COS: New containers brought out for use. Used containers taken to 3-compartment sink to be cleaned and sanitized. Will start cleaning and sanitizing and/or switch ing out for clean and sani tized containers every 4 hours. Floors need a good cleaning under equipment in back room - behind shelving, under coolers, behind chest freezer and around water heater - accumulation of dirt/ food/grease in these areas can be attraction for pests. This part of tea machine needs to be cleaned and san itized daily (same as remov able nozzles that are being cleaned and sanitized daily) as required by regulations so as not to allow for build-up of mold. Tea machines dis pensing assembly will be completely cleaned and san itized at end of service today. 1-door lowboy cooler holding time/temperature control for safety foods (TCS foods) above required 41F or below. Milk and half and half holding in this cool er at 45F - 47F. COS: Cooler stocked for day this morning < 3 hours, moved milk, half and half, whip cream canisters to walk-in cooler. Service company contacted. No storage of TCS foods in this cooler until cooler can maintain TCS foods at 41F or below. Shelving under all prep tables in main kitchen need a good cleaning - accumula tion of grease that has attracted dirt/food debris on shelving. Clean more fre quently to prevent build-up that can be an attraction for pests and can contaminate equipment that may be stored on shelving.
