COS: Drinks discarded by PIC. Will discuss
with staff correct cups and storage rack provid
ed in front of kitchen for employee drink stor
age. Variance not being followed with regards to
marking time pizza sauce is taken out of tem
perature control at 41F or below for approved
time of 24 hours. Label only documenting 72
hours from time of preparation until use. Better/
more frequent cleaning needed of floor under
neath overturned drink carriers used to elevate
storage off floor in back storage area and at
3-compartment sink where chemicals are stored
in overturned drink carriers - accumulation of
dirt/food debris (crumbs) underneath the drink
carriers. Floor/wall juncture in walk-in cooler
with accumulation of food debris.

Notes: Establishment closed yesterday, walk-in
cooler breaker tripped sometime between close
of business Tuesday and discovered upon return
to work right before opening today. Time/temper
ature control for safety foods that had been
cooked and were being cold held with tempera
tures above 41F. Temperatures ranged from 44F -
47F for these foods. Raw meat temperatures 41F
- 42F. Shell eggs 55F. COS: Cook noticed break
er tripped and it was reset. Ambient temp in cool
er dropping from initial 52F to 48 with 30 min
utes. Voluntarily discarded all TCS foods that
were cooked and being cold held above 41F and
eggs. Will need to continue to monitor tempera
ture of unit and foods allowed to be kept inside
(raw meat/vegetables) to ensure walk-in cooler
can maintain cold held foods at 41F or below.
Limit excessive opening and closing of the walk-
in cooler to aid in allowing temperature to contin
ue dropping. Egg rolls stacked in pan inside
another pan on top of 2-door sandwich unit with
only the egg rolls on the very bottom of the top
pan maintaining required cold holding tempera
ture. Double panning prevents the top from con
tacting enough cold air to maintain required cold
holding temperature. COS: Egg rolls stacked
above first layer that were not holding required
cold holding temperature voluntarily discarded.

Dawson County Emergency Services respond to a June 22
structure fire on Bannister Road.

Dawson County Fire and
Emergency Services responded
to a structure fire on Bannister
Road Saturday evening.
According to a press release
from Chief Danny Thompson,
crews responded at 5:13 p.m.
June 22 to 85 Bannister Road
where crews found a two-story,
2,000 square foot structure with
heavy fire showing.
Personnel deployed multiple
handlines and began an interior
attack on the fire, Thompson said.
Several vehicles and lawn equip
ment were involved in the fire.
Crews from Forsyth County
responded and provided assistance
because of the extreme temperature.
The homeowner advised crews
that all occupants had exited the
building prior to fire department
arrival. No injuries to firefighters or
civilians were reported on this scene.
“We are very glad there were
no injuries from the fire or due to
the heat,” said Thompson.
This incident is being investi
gated by Dawson County Fire
Marshal’s office. The cause is
still under investigation but
appears to have started in a lawn
mower. The structure has been
turned over to the homeowner.
