File photo earns B health score BBQspot KITCHEN INSPECTIONS: JUNE 7-13 From Staff Reports Several oversights recently led to a B health score for one local bar becue restaurant. Big D’s BBQ no. 2, located at 6656 Ga. 53 E., scored an 81 on its June 7 health inspection in Dawson County. The barbecue eatery got nine points docked off their score for improper heating of shredded pork and burnt ends. The food was being reheated in steam for well over two hours, with temperatures below the required 165 degrees Fahrenheit for reheating leftovers within two hours. The pork had reached temperatures of 70-72 degrees, and the burnt ends had reached 72-77 degrees, the inspector’s notes stated. The person in charge threw away the pork and burnt ends and removed the steam well of the line. On Friday, Big D’s was busy in the morning, and the food wasn’t being monitored as it should have been.The inspec tor recommended not using the steam unit until it can reheat food as required, and moni toring measures can be taken for food either reheats properly or so that corrective action can be taken sooner. Big D’s was also cited four points for hot dog and hamburger patty containers being stored uncovered in a reach-in freezer. The food was voluntarily discarded. The restaurant received a three-point violation for having many live flies in the kitchen. To control the entry of flies into the area, the inspector recommended the business contact pest management and work on replacing PVC strip curtains. That mistake was not corrected during inspec tion. Big D’s also got multi ple one-point violations for prep utensils being stored in salads at a prep top cooler, grease on the hood vents and fryer, a broken gasket in a prep top cooler with slimy or mold-like buildup. Other violations included dusty ceiling panels over the cook line, damaged or missing floor tiles in the dry stor age walk-in area and cracked concrete floor ing in the smoker area and uncovered dumpster garbage. The inspector recom mended that the restau rant work on a plan to fix its flooring in the smoke area and contact a ser vicer about a fryer leak. Food service establish ments are given a letter grade that corresponds to a percentile: “A” (90- 100), “B” (80-89), “C” (70-79) or “U” (69 and below). Any grade below 70 is considered unac ceptable or failing. Though the original design for the develop ment included 866 homes with a density of over four units per acre, the scope of the subdivision has decreased over time. One reason for the reduction of the develop ment’s intensity is the developer’s donation of eight acres for the construction of Keystone Village, a residential assistance community for adults with intellectual and developmental dis abilities.
