From there, the items will be sorted, handled and prepared for consumption. Food Service Partners, the lead tenant in the project, is a very large company, according to Couch, preparing roughly 26 million dollars a year. The future Little Tokyo will feature eight hibachi stations, as opposed to the current six, as well as eight regular dining tables, as opposed to the current three. The new place also will have ample patio seating. Overall, according to Lim, seating will increase from “around 70 or 80 to around 110 or 120.” The increased seating is secondary, however. Lim says that “the real reason” he’s investing so heavily is for the extra parking. If you’re ever talking to Lim, and you want Lim to open up and become more chatty, all you have to do is ask him about “parking.” It’s the magic word. He suddenly becomes more animated. He’ll tell you all about how he’s been taking his concerns to the land lord for years, how much of a nightmare Mother’s Day always was, etc. “Parking for us has been awful. Awful. I do not know what else to do,” he said. “We have (employees at other businesses who work in the same shopping center) park right in the front and not move all day. Sometimes, they’ll park on Fridays and leave their car there until Mondays.” The old Mellow Mushroom is a stand-alone parcel that features plenty of parking. Lim will finally be able to find peace of mind, albeit at a high price. Lim and his business partner paid $625,000 for the property earlier this year. “I know it’s a lot of money and (a) big investment, but I think that we will be okay and it (will) pay off in the long run,” Lim said. Little Tokyo has been popular in Baldwin County a long time and near the top of people’s list for birthdays and celebrations. The restaurant opened in February 2005 and quickly developed a following. Just like most people around here, however, Lim took a hit during the recession, starting around 2007 or 2008. Business gradually has returned to its previous levels, though, and Lim is optimistic about the future. “The last two years, it seems like the economy has really come back,” he said. Lim is targeting a January opening for the new Little Tokyo. Plenty of parking will be available. During its meeting on Wednesday, Nov. 15,10 board members and guest speakers were present. The standing of the Georgia International Food Center was one of the key updates provided to the board. Theprojectpends approval by the U.S. Department of Agriculture, which CSHLRA executive director Michael Couch felt was a matter of “when, not if.” The project would convert an on-cam- pus kitchen into a standard USDA Certified Kitchen and a high-pressure processing (HPP) facility. These upgrades would work in unison to produce “institutional type meals” for schools, hospitals, nursing homes and more. In part nership with Agricultural Logistics of Georgia, a new but promising technolo gy-driven logistics company, the Georgia International Food Center would aim to decrease supply chain time and waste less food. High-pressure process ing technology can “double and triple shelf life without chemicals, additives or heat,” according to the Avure HPP Food Processing website. Avure has other loca tions in Ohio, and Couch is excited about the possibility of bringing the technology to Georgia. According to Couch, the project would be funded by a combination of a $10 million USDA loan and private equity. Couch said the USDA appeared pleased with its site visit, and if approved, the project would require a construction time of approxi mately five and ahalf months. Property codes Baldwin County Board of Commissioners chairman Sammy Hall and commis sioner Henry Craig gave a presentation regarding the International Property Maintenance Code (IPMC) that has been discussed by the county board. They asked for a resolution from the CSHLRA board supporting the implementa tion of the code in Baldwin County. Amidst concern that citizens would find themselves in violation of the code without realizing it, the commissioners said the full code was available for public viewing on the IPMCwebsite. In addition, a public meeting regarding the issue occurred Tuesday, Nov. 21 at the Baldwin County Courthouse. Couch agreed to draft a letter in support of the Board of Commissioners, seeking a method for improving the community, however, the letter is not specifically for the code itself. Couch said he supported the Baldwin County Board of Commissioners choosing the mechanism they believed would be the best fit for the community. Young Gamechangers to present ideas in December For the last five months 50 of Georgia’s brightest young professionals have researched Milledgeville’s history, met with commu nity leaders, toured campuses and neigh borhoods, interviewed retirees, and re-imagined downtown in their quest to come up with big ideas and innovative solutions to some of the area’s most persistent challenges. The hard work will be revealed when the Gamechangers present their final recommenda tions from 2 p.m. to 4 p.m. on Friday, Dec. 8 at Simply Southern Barn.
