To four gallons of water add
one pound and a half of brown
sugar, two ounces l’altpetre, and
pounds of fait—boil them
together in an iron pot or kettle,
and ikim it repeatedly as long
as any feum riles, then take off
the pot, and let it Hand till the
liquor is cold. The meat being
placed in the vdfel meant to
hold it, pour the cold pickle on
ic nil it is covered, and put
fomethimg on to keep it in the
pickle, and thus keep it for
family Life. When it is intend
ed to keep it for a length of
time, the pickle mull be boiled
once in fix weeks or two months
at fartheff, adding, during the
boiling, two ounces of sugar,
and half a pound of fait, skim
ming as before directed. By
this management the pickle will
keep good twelve months, and
is always ready for a frefii lupply
of meat.
N. B. The foregoing method
is equally excellent for Bacon
and Beef.
