“The choice Irish butter which finds ft
market at Cork is said to bo the best butter in
the world. It cost theie the present season
80s. per cwt.,, equal to about 20 cents a pound.
This butter is packed in tubs containing G6 to
70 lbs. each. The quantity of salt mixed in
the making is about one pouud of salt to ten
or eleven pounds of butter; the buttermilk
well worked out of tho butter without using
the band too much. Care is taken to pack it
as close as possible. Space is left at the top
of tho cask for pickle, and at the port of ex*
portation the pickle is added, with one or two
pounds of salt additional to each cask, to keep
tho pickle at full strength."
A Vermont paper (the Caledonian,) in some
remarks upon this subject, an exceedingly in*
foresting ouo to all houso-keepers at this time,

“ The price of butter is so high thnt many
non*producers in tho country, and the poor of
cities, will hardly bo able to indulge in its use.
It Is well for humanity’s sako flint it is not the
* staff of lifo. People can ' live and glow fat'
upon bread and molasses, if not so fut as Juck
lfnlstulf by laughing, enough to bu comfort
able. .Wo imagine that those cows that dried
up so suddenly, or wouldn't 'give down* to
fulfil butter coutraots at a shilling a pound,-
sill come to their milk' without great delay.
Such cows must be too cunning and shrewd
to remain idle when butter sells for 30 cents a
pound.
Ctf' The Farmers in New bugUnd, it is
said, will save a large quantity of hay this
winter in consequence of the inild weather.
In many places the young cattle and sheep
have not yet required feeding. In Jefferson
county, New York, according to the N. York
Farmer, it is estimated that the saving in
that county aloue is one hundred Ions of hay
per day.
