1/4 wedge fresh lime
Combine Patron, Citronge, fresh
lime juice and sugar in a shaker,
Hand shake. Pour over ice into a
stemmed or lowball glass. Salt
rim and garnish with lime wedge.

Mini crabcakes
1 pound crab meat, flaked
1/2 cup canned corn, drained
1/4 cup dry bread crumbs
1/4 cup mayonnaise
1/4 cup yellow cornmeal
1 small red bell pepper, minced
1 scallion, minced
2 Thbs. prepared horseradish
2 Ths. butter or margarine
2 Ths. olive oil
1 Ths. salt
1/4 Ths. ground black pepper
In a large bowl, combine crab
meat, corn, bread crumbs, may
onnaise, red pepper, scallion,
horseradish, salt and pepper. Mix
well. Shape one heaping table
spoon of mixture into a one-inch
round patty. Place cornmeal in
shallow plate. Coat pattiesincorn
meal.
In 12-inch skillet over medium
heat, heat one tablespoon each of
butter and oil. Cook half of
crabcakestwotothree minuteson
each side until golden brown. Re
peat with remaining butter, oil
and crabcakes. Serve hot.
Yield: 30 crabcakes.
Shrimp Veracruz
2 cups yellow rice
2 Ths. olive oil
1 large green bell pepper, cut
into thin strips
1 large yellow bell pepper, cut
into thin strips
1 medium onion, diced
2 garlic cloves, minced
1 pound large shrimp, peeled
and deveined
114 1/2-ounce can stewed toma
toes
1/4 cup sliced pimento-stuffed
olives
2 Ths. Patron Silver Tequila
1 Ths. capers
1/2 tsp. salt
1/4 tsp. Tabasco pepper sauce
Parsley or Cilantro sprigs for
garnish
Prepare rice as label directs.
Meanwhile, in 12-inch skillet over
medium heat, in hot oil, cook green
and yellow peppers and onion until
tender-crisp, about five minutes;
add garlic. Cook two minutes.
Add shrimp. Cook three min
utes until pink. Add stewed toma
toes with their liquid, olives, ca
pers, Patron Silver Tequila, salt
and Tabasco. Over high heat, heat
toboiling; reduce heat tolow. Cov
er and simmer five minutes, stir
ring occasionally.
Serve shrimp over yellow rice.
Garnish with parsley or cilantro.
Yield: 4 servings. :
