This time around it’s Hungarian-style Cabbage Beef. It tastes delicious, serves six and holds an element of sur prise: it’s rarely met up with in the United States. The morning we tested it there were only two of us in the kitchen so most of it was left over. To see how the dish COOKING | IS FUN zskl V*) By CECILY BROWNSTONE Associated Press Food Editor Lime Mousse Sliced Turkey Relishes Cheese Macaroni Salad Bowl Lime Mousse Beverage LIME MOUSSE Tangy and refreshing and without egg yolks for cholester ol-watchers. 1 tablespoon unflavored gelatin ‘/z cup lime juice 3 /4 cup very hot water Sugar 2 whites from large eggs 3-ounce package cream cheese, soft 1 cup heavy cream Grated lime rind Sprinkle the gelatin over the lime juice and allow to soften about 5 minutes. Stir in the very hot water, then ‘/a cup sugar until dissolved. Chill until beginning to thicken and set; beat lightly. Without washing beater, beat cream cheese lightly; gradually beat in the gelatin mixture until blended. With a clean beater, beat the egg whites until stiff. Without washing beater, beat Vb cup of the cream until stiff. Fold the egg whites, then the cream, into the gelatin mix ture. Turn into %-cup size serving dishes; chill to set. At serving time beat the remain ing cream until stiff, adding 1 tablespoon sugar and & tea spoon vanilla toward the end of the beating; spread over the mousse; sprinkle with the lime rind. Makes 8 servings. Tomato Cocktail GARDEN SUPPER Home Tomato Cocktail Spinach Quiche Salad Fresh Berries with Ice Cream HOME TOMATO COCKTAIL There’s gratification in con cocting this! 2 pounds very ripe tomatoes 1 small onion, thinly sliced 1 rib celery including leaves, thinly sliced 1 green pepper, seeded and thinly sliced I-arge sprig parsley 1 bay leaf 1 whole clove Salt to taste h teaspoon Worcestershire sauce Tabasco sauce to taste Rinse, stem and quarter to matoes. Gently cook the onion, celery, green pepper with a little water until tender. Add the tomatoes, parsley, bay leaf and clove and cook gently until tomatoes are very soft. Put through a food mill. Stir in re maining ingredients. Pour over ice in a pitcher and serve cold. Makes 4 to 6 servings. Stuffed tuna cucumbers LUNCHEON FOR FOUR Stuffed Tuna Cucumbers Bread Basket Peach Cream Cake Tea STUFFED TUNA CUCUMBERS Attractive salad that tastes good. 2 cucumbers, each about 7 inches long 7-ounce can tuna in olive oil % cup finely chopped celery cup finely grated pared carrot, loosely packed cup mayonnaise cup commercial sour cream % teaspoon lemon juice Paprika Pare cucumbers; cut each in half lengthwise; scoop out seeds and discard. Stir together the remaining ingredients ex cept the paprika; fill cucumber cavities with the mixture; sprinkle with paprika. Garnish with salad greens and cherry tomatoes. To make the leftover Cab bage Beef look attractive we cut it in wedges, arranged them slightly apart on a round serving plate and reheated them in our microwave oven. Then we garnished the inter stices copiously with parsley and watercress and served up the dish. It looked great! French bread and sweet butter, a salad and dessert completed the menu.
