Two strawberry cultivators divided equally a two acre strawberry patch so that each had an acre. Botli were mulched alike at the approach of Win ter, with a deep covering of straw. The following Spring the straw was entirely removed from one patch, and allowed to rernaiu us a mulch till the berries ripened in the other. The fruit of the former sold for $G00; of the latter, over $1,300. It is not stated whether the ground of the un mulched acre was kept constantly mellow and clean. It is recommend ed, where straw is scarce, sowing oats in autumn between the rows—which will be killed down in Winter and form a mulch —whipping the oats with a brush over the plants. They protect the plants from dirt the following sea son. The only objection is that the oats, like weeds, may diminish tho Au tumn growth of the strawberries.—ln dustrial (f: Commercial Gazelle. A pullet hatched early in spring be gins to lay at the approach of wintcr> and tiio.se hatched late iu the summer begin to lay ia the ensuing spring; and it is by saving a certain propor tion of pullets from the early and late broods that you make sure of winter eggs, a few very early-hutched chick ens for catching the highest markets, and a numerous flock of chickens in the warm mouths, when rearing is less precarious. To Take Stains out of Knife Han dles, Bone or Ivonv.—Dip a w'ct flan nel into salts of lemon, or better still, into oxalic acid in powder, and rub it into the handles; let it dry, and then wash oil'with soap and water. Salts of lemon is oxalic aciu partly neutral ized by an alkali. It, is, therefore, less potent, than the pure acid. Whenev er it js directed to use oxalic acid, stdta of lemon may be substituted, and vice versa. Mock Oysters.—Add three eggs to three grated parsnips; one teacup sweet cream; butter, half the size of an egg; one teaspoon salt; three table spoons flour. Fry as griddle cakos. To Mend China.—Take a very thick solution of gum-arabic, and stir into it plaster of Paris until tho mixture is of a proper consistency. Apply it with a brush to the fractured edges of the China, and stick them together. In a few days it will bo impossible to break the article in the same place. The whiteness of the cement renders it doubly valuable. Antidote for Poison.—A poison of most any description and degree of potency, which has been swallowed in tentionally or by accident, may be rendered almost instantaneously harm less by swallowing two gills of sweet oil. An individual who has a very strong constitution should take twice the quantity. The oil will neutralize every form of vegetable or mineral poison with which physicians are ac quainted. ♦ Apple Dumplings.—Three-fourths of ft pound of beef suet, chop fine; add a little salt, and flour enough to make a paste. Then, having previously pared and cored your apples, roll out the paste for each dumpling, till with ap ples, and roll up in cloths, sewing each cloth to keep it tight Have the wa ter boiling, and let the dumplings boil steadily for cue hour. Apple Dumpling (No. 2). —Make a crust of one quart of flour, two table spoonfuls of cream tartar, one tea spoonful of soda, a tablespoonful of butter, a little salt, and milk enough to make a dough that can be rolled out. Cut this dough in eight pieces, roll them thin, put slices of sour apple upon them, fold them up tight and steam or bake. Baking will require about twenty minutes, steaming an hour. Serve with solid or liquid sauce. Omelette Souffle. —One cup flour, one pint of milk, one spoonful of su gar, butter size of a walnut. Scald milk, flour and butter together. Af ter the batter is cold stir iu the yolks of five eggs. Stir in the froth of the whites, just before baking. Bake in a quick oven. Eat with sauce. Snow-Flake Cake. —One cup of but ter; three cups of white sugar; three and one-half cups of flour; one-half cup of sweet milk; whites of ten eggs; one heaping teaspoonful of baking powder. Stir in the flour quickly. Bake in three tins For the icing take the whites of three eggs and one pound of powdered sugar; spread the iciDg and sprinkle grated cocoanut be tween each layer, and over the top and sides. Mks. J. P. Rice Pudding.— One quart of rich milk; one-half cup of rice; one-half cup of sugar; a little salt. Bake in a Blow oven, and keep stirring occasion ally, until you wish the crust to form. Flavor with nutmeg; add raisins if you choose. This makes a small puddiDg. Mbs. J. P. Why will next year be like last ? Because last year was 1870, and next year will be 1872 (too).-Ex,, 1871.
