given below. It took a premium at
the last State Fair, but has never ap
peared in print before.]
Doubtless those who have become
skilled-in fte art, after long yeara of
practice, will think that.a young house
keeper’s experience is too limited to
be heard on so important a subject,
and that she can tell them nothing
about which they are not already in
formed. Of course, to write for this
class would be superfluous. Admitting
that my experience is not very lengthy,
nevertheless, I imagine that I'can give
a'few items of practical infoimation
upon the subject that maybe useful to
those who have commended the ardu-
ourtaak without tee necessary knowl
edge to-perform its, duties. ’ Possibly,
during their' girlhood,' they may have
learned to apply the broom to its legit
imate use, may have occasionally “car
ried the keys,” given out meals, seen
that the table was properly arranged,
and may vainly imagine that they pos
sess all the knowledge of Mfcuso keep
ing that will be strictly requisite.'’ Of
the amount of food necessary to be
prepared for a given number of per
sons, of the length of time required
in cooking various dishes, and of the
best and most economical use of their
supplies, they are totally ignorant
In the present state of affairs, this
information is of primary importance,
not only from the difficulty of procur
ing good honest servants, but also
from the uncertainty of freed labor,
rendering it often necessary for us to
do our own house-work. Every lady,
it matters not what her circumstances
are, should endeavor to learn every
thing connected with. house-keeping.
Should her means permit her to keep
servants, she would be saved from the
frauds and impositions that -they so
frequently practice upon the inexperi
enced; and should her husband’s in
come not admit of this, - should hc fail

logendary history of Scotland and Ire
land. They seem eventually to have
constitfited a kind of established mili
tia,-whose duty it was, -in the words of
ah old historian, “to' defend tlie fconn-*
try against foreign or domestic cae-
mies, to support the right and succes
sion of their kings, and to be ready
-upon the shortest notice for any sur
prise or emergency of the state.”
