Put in a well greased tin pail, cover tight and set in a kettle of boiiing water ; cover and boil two hours. Stir constantly while boiling until the jam is perfectly smooth quite thick, then put in jelly glasoes or jars. Calf’s Head Soijp.— Inks a qgtlf’s head, and part of the liver and lights ; boil in six quarts of water, until you can take the bones out; put it on a dish and season with pepper, 6a r, thvme, mace and cloves ; skim the water, if there be any fat on it; put all back in sime water, and let it boil until well done; brown with ourut sugar, and thicken with a little fl ur, .butter and force meat balls Chicken Soup.—Cut up the chickens, and put on to boil wi;h some small pieces ol bacon, pnrsly, thyme, pepper and salt ; make your dumplings of two eggs well be iten, with a spoonful of melted t utter, and a small bowl of flour. When well mixed they may be dropped in. the soup while boiiing. After the soup is done, add one pint of milk,.and lqt it boil up well for a few minutes ; then dish. *"*■*——» ill Preserving Fggs. lOO French Journal de Pharmacie contains an ucc■•unt of varum* experiments made in Franco on the be-t method of preserving eggs —a subject of much importance there. Among the differ ent processes ttie beef, and at the same time one of the simplest, n-i found to con sist in rubbing some vegetable oil (iindeed especially) on the <gi, this preventing any alteration for a sufficient t rue, and proving to be much more satisfactory than any other plan hi'herfo recommended. Heaves in Horses—A ■‘Veterinarian” writes the Rural New Yorker : ‘ Heaves are Caused by the enlargement, and Often rup ture of the air cells of the lungs, and are incurable ; for no medical skill can rebuild or repair the broken down structure of the lungs. Much can be done for the relief of the animal, however, bv the f ed, which should bo nutritious, and lio in little com pass. as bulky feed distends the stomach and presses upon the lungs. Pionty of grain and little hay, wi r h the dust well shaken out, and a little water sprinkled nn. with steady work, or exercise, will do as much to relieve the horse, and make him useful as anything.” To Train a Horse to Stand—Tl;e American Stock Journel contains the f>l lowing directions; Take your horse on the barn floor and t ! r w a strap over his back and fasten it to his right fore foot; lead him along and say ‘•whoa,” at the sanrrn time pull down on the strap, which throws him on three feet and makes him stop sud denly. This is the t way knotyn to teach whoa, though you can put on the war j bridle, and say whoa, and give him a sharp j jerk that will stop him ah at as soon as the strap to his foot. Then put him in harness, with the foot strap, as directed under the head of ‘‘training horses,” and drive htm up to the door. The moment he attempts to move take his foot and say whoa. G f in your carriage and get out again ; rattle : the thills, make all the noise getting in and out you can ; g've him to understand, by snatching his foot each time fie moves, that be must stand until you tell him to go; and after a few times you can put the whole family in the carriuge and he won’t htir out of his'tracks.
