Some of the Various Causes of
Cake Failures
1 A cake is “bready” and solid
when too much flour has been
used.
2. Sometimes heavy cakes are
caused hv too slow an oven, or by
the use of too much sugar or but
ter.
.‘J. Coarse-grained cakes may be
the result of too much leavening
ingredients, too low an oven, in
sufficent cream ng of butter and
sugar, insufficient heating of bat
ter before addition of egg-whites.
4. When a cake "falls” it is oc
casioned by insufficient quanitity
of flour or r smg ingredients, or
from moving it in the oven after
the cake has risen, but before the
(■ell walls have become fixed or
firm by the heat; too ^st an oven
or removing from oven before
thoroughly baked,
5. Large-holded angel cakes are
usually occasioned bv insufficient
blending of egg-whites with other
other ingredients; too I ttle sugar
or too fast an oven might produce
such an effect also.
