OLD ENGLISH PONCH33.
The Potent Mixtures In Which Our
Forefathers Indulged.
From a Boston Transcript Letter.
Here is a copy of the ingredients of a
“modern punch” of 1830, by P. Watler,
Royal lodge: ‘‘Take four ounces of clarified
sugar, thin peel of one lemon and one
h ville orange, one bottle of dry cham
pagne, one-half bottle of white brandy, one
balfgillof rum, one-half gill of arrack, one
half gill of pineapple syrup, one wineglass
of Maraschino; pour cue quart of wa'er
over two teaspoonfuls of green tea; let it
stand five minutes; strain and mix with
other ingredients; on ice thirty minutes.’
Here is Bannister’s milk punch of 1829:
“Pare eighteen lemons very thin; steep
the same three days in one quart best old
rum: then add two quarts best brandy, the
juice of nine Seville oranges and nine lem
ous, three quarts of water, three pounds of
double refined sugar, and two grated nut
megs; when the sugar is dissolved mix thor
oughly; add two quarts scalded milk, cover,
and let stand two hours; then strain through
a tammy and bottle; when required for use
it should be iced twenty minutes before
drinking.”
Tolpsev gives the following account of a
"West India planter’s punch:
"He made his appearance with a respect
ably sized bowl, an enormous jug of tailing
water and a large paper bag tilled with
sugar. Having extracted from his secret
More a bottle of bis matchless rum, his
limes and a small pot of guava jelly, he
brewed about a pint of green tea (two
ounces) and the infusion finished two-thirds
of the sugar was dissolved In it. After the
tea leaves had been thrown aside, the re
mainder of the sugar was rubbed on the
] i;nes Mr. Hamilton observing that
the essential oil, which conveyed the
exquisite flavor 1 , vra3 much more
strongly diffused throughout the com
pound than when the skin was peeled—
then the delicious acid of the fruit was
added to the already impregnated sugar,
and as soon as the several lumps had im
fiibed the proportions required, the guava
jelly (and without this confection no punch
can be pronounced perfect) was dissolved in
a pint or so of boiling water. This done,
the tea, the sweets and the acids were com
mingled, and the foundation or sherbet
tasted by the experienced palate of the
grand compounder; siz glasses of cognac,
two of Madeira, aud the bottle of old rum
•were added, and over all about a quart
more of boiling water, and, as a finishing
touch, the slightest possible sprinkling of
nutmeg.”
Here is an Oxford punch:
“Put the thinly pared peelings of four
lemons and two Seville oranges into a mor
tar containing one-half pound of loaf sugar,
•which beat up into a smooth mass, into
which squeeze the juice of the fruit, adding
the juice of four sweet oranges and half a
pint of water; strain the mixture into a jug
(standing close to the 11 e); add one pint of
calves-foot jelly, which thoroughly incor
porate; pour in two quarts of boiling water,
half a pint of syrup, teaspoonful of orange
flower water, wine-glass of curacoa, half a
pint of sherry, pint of cognac brandy, pint
of pineapple rum, quart of orange snrub;
stir well together.”
Now follows a Cambridge milk-punch;
“Boil in two quarts of new milk one
dozen bruised bitter nlmonds and parings
of two lemons, and half a pound of loaf
sugar; when well flavored strain clear and
keep warm; stir in the well-whisiied whites
of three eggs, which have been well mixed
with a little cold milk; when still stirring
add one-half pint of rum and one pint of
brandy ; mull the punch to a froth and serve
immediately in glasses.”
There was, fifty years ago, a Russian
punch much in faver in England, composed
of three pints of weak green tea, one pound
of sugar, six lemons strained, a pint of
arrack or a gill of Kummel, a pint of port
wine, and sweetened to the taste. This is
rocommendod by some of the boys at “high
teas.”
BORAX BATHS.
They Make One Feel Good as Well as

Delicate women, says the Detroit Journal,
writers and sedentary persons who feel
chilly even in the summer should never sit
without foot-warmers or fur-liued slippers
if at all chilly. Mental exercise exhausts
the bodily heat. You remember how
George Eliot always was chilly when writ
ing, nnd many a professional worker recog
nizes the familiar feeliug. Hot baths, with
plenty of borax in the water, and friction
afterward, get up a healthy action of the
skin, which leaves the face fair aud opal
tinted hours afterward.
One of the most beautiful complexions I
know is kept by this practice, joined to care
in eating. The eyes will be dark and bright
after such a bath, but if you want to insure
their brilliancy a pharmacist who studies
these things says one must eat freely of
tomatoes for the sake of the atropine or its
kindred quality they contain. Certainly
wholesome tomatoes keep skin and eyes in
good condition as far as food can do it.
