which the tanner extracts from the hark
is of no value ns a fertilizer In reality,
because this is obtained from tlio atmos
phere ; it takes nothing which comes
from tho soil, and is of value when re
turned to tho soil. Leaves contain more
potasli nml uhosphates than the limbs
or timber of tho tree. Bark contains
nearly as large a quantity of these min
erals ns the leaves, weight for weight.
You will find a much larger bulk of
nshos after burning wood. If bark
from the tannery is placed in a hill and
mixed with quick lime, decomposition
will bo accelerated and a pile of fertiliz
ing matter obtained which would be
equal in value to many of tbo cheap
fertilizers sold. Your pile made up this
fall and turned over a few times in tho

Domemlie Economy.
Ginger 'Oobdiai..—Ouo pound of
white currants bruised to one quart of
whisky and tlio rind ol one lemon. Let
it stand one night, strain and squeeze it
well. Add one pound of white sugar
and one ounce of ground ginger; strain
through a fine cloth; lot it settle well
beforo bottling.
Lkuomake.—Take tho rinds of four
lemons, pared very thin ; three-quarters
of a pound of loaf sugar ; pour on them
one quart of boiling water. Take the
juice of the lemons in another vessel and
pour on them one pint of boiling milk.
Let both remain till the next day. Then
mix the whole together, adding half a
pint of raisin wine. .Strain all through
iv jelly bag until clear. The milk should
bo removed from the fire and used be
fore the froth rises.
Boston Brown Bread.—One pint of
tepid water, two gills of wheat flour, one
pint of rye meal, one pint of Indian
meal, half a pint of molasses, one and a
half gills smart yeast, one teaepooi.ful
salt, one small teuspoonful oarliouate of
soda; mix well, pour into a tall straight-
sided mold with a tight cover. Let it
rise three or four hoars. Remove the
cover and set it in a moderate oven to
dry for half un hour. Servo hot iu

•Minced Mutton.—Talto some meat
from a joint of roast, boiled or braised
mutton ; remove (lie skin und outside
parts, mince it very flue; put a small
piece of butter into a stewpan, wkon
melted add half a table-spoonful of flour;
stir two or three minute# over the fire ;
odd a gill of well-flavored stock; -wlsan
Imiliug put iu the mince ; add salt, pep-
pei, a little grated nutmeg, chopped
paisley, a few leaves of thynu else fine
ly minced, and the yelk of one egg; stir
all ou the fire for sorao minutes; then
serve with bread sipjieta or croquettes
of potatoes. If put aside until cold this
mince can he used in various w ays.
Rock Canes.—Eight ounces of flour,
three ounces of our rants, tlvree ounces
of powdered sugar, one ouneo of lenicn-
l>eel »li :od fine, one teuspoonful of bak
ing-powder or half thatquantity of soda.
Rub all together and mix to a moderato-
ly still' dough with buttermilk. Drop
the mixture with fork iu little heaps on
greased paper, so that tho surface of
each cako has a rough and uneven *»;»-
penranco, hake quickly of a light brown.
Those cakes will net keep long, but are
delicious eaten ns soon as cold or even
the next day. For storing, four ounces
of butter should be added to tho other
iugredicuta ; then they will be nioe a
week after baking if kept in a cleee enke
tin.
Jam Roll.—Tako the weight of three
or font eggs, in their shells, of finely-
powdered sugar, and tho same weight of
butter and flour; melt the butter, add
the sugar and the yelks of the eggs
(freed from the sjiook) ; lioat the mixt
ure well, add tho U-ateu-up white* of
half the eggs, then half the floor, the
rest of the whiten (also beaten up) and
tho flonr. When quite smooth spread
it out, about half an inch thick, over a
well-buttered tin, and bake for fifteen
or twenty minutes in a moderate oven ;
spread it all over oqnally with jam, roll
it up and put it into the ovon again for
n short time; sprinkle with powdered
sugar and serve cold ; if liked, with a
custard rotuul it.
To Wahb Lack.—Mix a teaspoon of
powdered borax in a basin of strong
white eastilc soapsuds. Haste the lace
to he washed very carefully with flno
thread upon two thicknesses of flannel.
Soak tlio lace thus arranged iu tho su.ih
mixture tweuty-four hours, or longer if
very dirty, clumging the suds two or
three times. Then let it lie a couple of
hours in clean water to rinse, changing
the water once. Squeeze it out (do not
wring it), and when partially dry place
the flannel, with tlio loco ou it, Woo
downward, oh two thicknesses' of dry
flannel, laid on a table, and smooth it
with a hot iron. When tho lace is quite
dry, rip it off. It’s considerable trouble,
hut tho lace looks beautifully.
