A Revolution in the Pro-' vision Trade. TU» Ciocln rtati Price? Current, un der heading of Provision Trade Revolution, gives some interesting information concerning the growth of anew industry,—the ice curing of pork iri the summer—which it says is making“ giant breaches ” in the old packing trade. According to this Uadv journal, it may almost bo said tlial it is no longer necessary to salt and lay aside meat in winter al all, any pigro than at any other sea son ;* thero'bcing’ however, a few Weeks in the heated term of summer when it,is not necessary nor desira~ ble to handle or use such meat. — Swine are fattened more convenient ly and more economically in fall wea. ther, and then transportation can be dont!'twenty per cent, cheaper Fresh ice-curcd meat is brighter, sweet#, and sells higher for several of the leading qualities, than the dry, highly salted winter cured. Ice bonnes have been constructed ut many Western points where packing continues constantly and safely all the summer. The extra cost of cold air from ice is being rapidly reduced and is already costing less than the expense of holding meat over from winter to summer. This state of af fairs has completely upset the old business by which the wealth of the pork packing business has been re* 'quired. And the article concludes with the remark that “ the last win ter’s packing stock has lately been selling at a loss of some forty pc*r cent.” Whether the indifferent success, which, according to this authority, has lately attended what was once the greatest single interest in Cincin nati is wholly due to ice packing may be questioned. The Cincinnati Enquirer contains a copy of an agree meht entefed into by the packers there, dated November Ist, in which they formally covenant with each other “thatthey will in the puichase of gross hogs, during the packing season of 1871 and 1872, only weigh as merchantable hogs such as will walk without assistance to the scales. ’’ It is comforting to the gen eral censmnerjto know that herpaca era have “ struck hands ” over a bar gain jjot to salt away any more “ broken down or diseased ” pigs. Disappearance of Wild Animals. The moose, now almost entirely driven fVotn the United States, was, at the time of the first European set tlement, found as far south as New York city ) the range of the cariboe was not more extensive than it is now, although fossil remains have been found as far south as the Ohio; the musk-ox is not mentioned by the early travellers; but the common deer (Cervus virgtnianus and C. campestris') was everywhere repre sented as existing in incredible num bers. The Wapiti deer was found all along the coast from Canada to the Gulf of Mexico. The bison, (improperly called the buffalo by the early settlers,) also rapged along the coast from the val ley of the Connecticut to Florida, and roamed over the entire country now known as the United States, and ex tending as far north as the sixtieth parallel in British America. Mr, Hays reckons that at the present time not fewer than half a million bisons are annually destroyed by the hand of man. The red fox existed in America be fore the existence of the white man, in addition to the gray species, not withstanding assertions to the con trary; wo vos were everywhere abundant; as also was the beaver ; the jaguar, not now found east of Texas, occ "red in the mountains of North Carolina as recently as 1737 ; the dog was found in all parts of the country ; and from the descriptions, must have been of the same species asthpse now found with the Indians of the plain.— Nicholson'a World of Science . Cubing Mkai\—-At this season of the year the thoughts of almost every farmer- naturally turn more or less to the process of killing meat for winter use. Most farmer’s have a pig or two to salt down, and some have mutton or beef, and the quality of meat which is to furnish food for the family will depend a good deal on the way it is .curedT We clip th® following from an exchange : To one gallan of water, take one and a half pounds of salt, half a pound of sugar, half an ounce of salt petre, half an. ounce of potash. The meat mußt be covered with pickle, and should not be put down for at least two days aften killing, during which time it should be slightly sprinkled with powdered saltpetre, which removes all surface blood, etc., leaving the meat fresh and clean.— Some omit boiling the pickle, and fifiii it to answer well, though the operation of boiling purities the pick le by throwing off the dirt always to be found in salt and sugar. Adulteration of Lard —A Cana dian journal says that a lard renderor confidentially imparted tojtthe infor -■«a&tion recently, that a common among lard dealers is to ifiix 1 from "tww'-t.o five per cent, of rnilk of lime witu jgj-q or_ der to not only a p ea rly white product, but to allow the stirring in, during cooling, of tw#%-j five per cent, of water. We suggest to those who purchase lard, that they had better give their orders to honest people than to such white washing lard dealers. We should like to be autocrat of the United States long enough to apply a little powder to the development of hones ty in trade lor a little while.
