The energy-wise cook
should take care to see that
the surface units of the
electric range are used
properly for maximum effi
ciency. Unlike the oven, the
surface units consume
energy the entire time
they’re in use, unless
thermostatically controlled.
Here are some tips for
economical range-top cook
ing:
Fit the pan to the correct
size heating unit for the most
efficient use of energy. A pan
smaller than the surface unit
wastes heat. The excess
space around the pan only
heats the air. If the pan is too
large for the unit, uneven
heating can result and the
pan will take longer to heat.
Follow the range manufac
turer’s suggestions as to
which heat settings are best
for particular foods.
Tight-fitting lids are im
portant, too. They prevent
heat and moisture from
'escaping. Avoid lifting the
pan cover to stir more than is
necessary.
Instead of boiling water in
an open pan, use a tea kettle.
Use the highest setting only
to start a boil; a lower setting
will keep water boiling. Heat
only the amount of water
needed.
Switch controls from high
to low as soon as the food
begins to cook. Foods cooked
at a low temperature will
look better, taste better, be
more nutritious and cost less
to cook.
Turn the unit off as soon as
the food is done. In some
cases, the unit may be turned
off shortly before the food is
done, allowing it to finish
cooking with retained heat.
If you use small amounts of
water in cooking, foods will
heat faster, require less
energy and retain more of
their nutrients.

The three irons in the left
photo all have one thing in
common: weight!
Valuable antiques today,
they once were the latest thing
in making ironing “easier.”
They were in use in the late
1800s, just before the advent
of the electric iron.
At the lower left is a char
coal iron. Burning lumps of
charcoal were dropped into
the iron through the opening
in front, which was called the
“chimney.” A damper ar
rangement at the rear allowed
the user to make the charcoal
burn faster for more heat or
slower for less heat. It was
known to spit out dust and
soot, of course.
Tiie iron at the lower right
burned alcohol to generate
heat. The bulb at the rear is the
tank and a perforated rod
runs into the iron’s base and
jets of flame came from it

In addition to alcohol,
similar irons actually burned
gasoline!
The third iron above the
charcoal and alcohol models is
one of the first electric irons,
fating back to about 1900.
Although it looks smaller, it
weighs about the same as the
other two.
In the right photo is the
latest development in irons,
an iron with a man-made
jewel. It has a jewel for the
same reason watches have
jewels, to make it perform
better and last longer.
