Raw Oysters Must
Be Health Certified
Buyers of raw oysters in Geor
gia have been warned by the
Georgia Department of Public
Health to accept oysters only
from a certified operator or
shucking plant.
For the protection of the health
of the public, oysters in Georgia
and all other oyster-producing
states must be sold only in con
tainers bearing the name, ad
dress and certificate number of
approved operators, according to
Robert Dean, senior public health
engineer, Engineering Service,
Georgia Department of Public
Health.
Oysters gathered in untested
waters or bought from bootleg
operators may be contaminated
by sewage or industrial pollution
and are not safe for eating. A
mong diseases that can be car
ried to man by polluted oysters
are typhoid, dysentery, hepatitis,
and other intestinal infections,
Mr. Dean cautioned.
Raw oysters still in the shell
may be sold only in clean bags,
crates or baskets with a tag
bearing the operator’s or ship
per’s name, certificate number
and local area. They must be
stored in a cool place until sold.
Raw oysters out of the shell
may be sold only in sealed con
tainers bearing the operator’s or
shipper’s name, address and cer
tificate number impressed, em
bossed, lithographed or otherwise
permanently printed on every
container, or on the cover if the
cover is per.mantly sealed to the
container. The raw oysters must
be kept at a temperature of 50
degrees Fahrenheit within two
hours after shucking until sold,
Mr. Dean said.
Certificates to operators for
shucking, packing or shipping are
issued each season in Georgia by
the Health Department, acording
to Mr. Dean. The Georgia season
is September 1 to April 30.
