Q. What are hydrogenated fats?
A. Hydrogenation is a process
by which hydrogen is added to
oils to obtain a solid fat product.
Margarine and shortenings are ex
amples of hydrogenated fats.
Q. What ar* unsaturated and
saturated fats?
A. A fat is described by the
chemist as saturated if it can
combine with more hydrogen and
as saturated if it cannot. Gener
ally, unsaturated fats are liquid
at room temperature such as the
oils extracted from cotton seed,
soybeans, corn and safflower seed.
Most saturated fats are solid at
room temperature. These include
beef suet, hydrogenated vegetable
fats and mutton tallow.

A. Weight for weight, the calorie
values of sugar and starch are a
bout the same.
Q. What are high-calorie and
low-calorie foods?
A. There is no exact line of de
marcation. The calorie value of
a food depends on its composi
tion. In general, foods highest in
calorie value are those rich in
fat and low in moisture. Other
concentrated sources are foods
composed mainly of carbonhy
drate or protein or a mixture of
either or both with fat. Sugars,
cereals, dried fruits and cheese
are among the relatively concen
trated sources of energy. Foods
low in calorie value in general are
those that contain large amounts
of water and relatively little fat.
These include many fruits and
vegetables, particularly succulent
vegetables.
Q. When I buy round steak, it
is sometimes red only on the out
side and grayish brown on the in
side. Why is this? Is the meat
still good to eat?
A. Beef is always a dark, pur
plish red when first cut. After it
is exposed to air for about 30
minutes the color pigment be
comes oxidized and turns red.
This accounts for the red outside
and the dark inside. Such a con
dition is perfectly normal.

Copper Wire
Thefts Bring
14 Convictions
Copper is scarce and the mar
ket price for the scrap metal is
up, but at least 23 people in Geor
gia already have learned that il
legally obtained copper wire can
be more costly than the few dol
lars they get from its sale.
W. B. Smith, local manager for
Southern Bell, this week reported
that during the past few months
14 convictions — with sentences
ranging up to 3 years, have been
made in the criminal courts of
Georgia for thefts of copper wire.
“We have been experiencing
these thefts throughout Hie state,”
Mr. Smith said. “So far there
have been 34 cases, most of which
have been along our isolated long
distance routes. Telephone ser
vice has been disrupted in some
instances.”
In an effort to curb the thefts,
new alarm mechanisms are being
installed on telephone lines. These
new devices will sound an alarm
in the telephone office when a
wire is cut — even if it has been
deactivated.
The cooperative efforts of local
law enforcement officers and
Southern Bell’s Security Managers
have resulted in 32 arrests in con
nection with these thefts. In addi
tion to commending the police,
the telephone company said it has
received excellent cooperation
from scrap metal dealers in
Georgia.
“Court proceedings indicate
the effectiveness of the investi
gations,” Mr. Smith added. “Os

TO SHELL OR NOT
Unshelled pecans resist insects,
molding, and rancidity longer
than shelled nuts. Shelling, how
ever, reduces weight and the a
mount of space needed for stor
age. The container used for stor
age should be a tightly covered
utensil. If pecans are to be kept
over six months, they should be
frozen, according to home econo
mists with the Extension Ser
vice.
