ticulturist J. M. Barber suggests
removng a healthy sucker and
transplanting it just as you would
a regular tomato plant. Set the
sucker deep in the soil, water it
thoroughly, mulch, and shade the
plant until it begins to grow.

Q. I have trouble keep
ing paprika this summer;
can you help?
A. In hot or humid weath
er, place paprika and red
pepper blends in the refri
gerator to guard against mold
ing or infestation.
Q. Is allspice a blend of
several spices?
A. No allspice is a sepa
rate spice that comes from an
evergreen tree of the myrtle
family. The flavor of allspice
resembles a blend of cinna
mon, nutmeg and cloves,
hence the name allspice.
Q. Please give me help on
buying spices and herbs.
A. Buy only those you will
use. Spices and herbs lose
their flavor and aroma with
time. A small number of of
ten-used ones will be much
more satisfying than a large
rack of spices that are never
used. Buy in small quantities.
Ground spices should be used
up and replenished within
six months if flavor is to be
at its maximum. Whole spices
and herbs keep their flavor
longer. Try blends such as
chili powder, poultry season
ing or Italian seasoning for
one blend will take the place
of several separate spices or
herbs. Compare price per
ounce. Fancy containers are
sometimes expensive.
Q. What is the different be
tween spices and herbs?
A. “Spice” is often used to
cover the whole array of
spices, herbs, seeds, vegetable
seasonings and blends. To be
more precise, spices are parts
of plants which usually grow
in the tropics, whereas herbs
are always leaves of temper
ate zone plants.
Q. Is Monosodium Gluta
mate a tenderizer?
A. Monosodium Glutamate
is often called for in meat
recipes, but it is not a ten
derizer. It is used for flavor
ing, but strangely enough it
does not have a flavor of its
own. The white crystals are
used as a seasoning to inten
sify the natural flavor of
many foods. It can be added
during the cooking period or
added individually in the
same way as salt or peper.
Q. How can I substitute
garlic powder for fresh gar
lic?
A. Use one-eighth teaspoon
of garlic powder for each
medium-size clove of garlic
called for in the recipe.

gia landowners today than ev
er before. Many farmers, they
point out, are looking to tim
ber for an increasingly lar
ger share of their total farm
income. As taxes increase and
other costs continue to rise,
better forest management is
needed to see that woodland
acres produce profitably.
