Halloween has come and past,
Cooking the pumpkin is now the task.
ATLANTA (PRN) — Hopefully you scraped out the insides
of the pumpkin before you carved the Jack-O-Lantem for
Halloween. If so you probably have lots of nice juicy pumpkin
to cook up for Thanksgiving pies.
Discard the seeds and stringy portion. Add a little water to
the rest of the pumpkin and cook it down until it is soft - the
texture of cooked sweet potatoes.
Refrigerate or freeze for later use.
The pumpkin is a branch of the squash family tree. It is
native to the Americas and was unknown to Europeans before
1492. The Pilgrims found pumpkins quite tasty and thus
pumpkin pies have laden our Thanksgiving tables ever since.
For those with no fresh, round, shiny pumpkins to scrape,
shining cans of pumpkin are now filling grocery shelves as the
holiday season approaches.
When you serve pumpkin pie, you can smile to yourself
because you’re serving a “health food” - not just an empty
calorie dessert. One slice of pumpkin pie provides practically all
the vitamin A needed for one day. The brown sugar supplies the
“missing mineral, ” iron -- to keep you from being tired and
dragging during the hectic holidays.
In case you missed the recipe for “Quick Crusts,” I’ve
included it again.
Jack-O-Lantern Pie
(Pumpkin, of course)
11/2 cups cooked pumpkin
3 whole eggs plus, one white
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon salt
1 cup dark or light brown sugar
3/4 cup light cream
1/4 cup bourbon whiskey or 1 teaspoon vanilla,
plus 3 tablespoons cream
* This uses up the white left over from the crust. Add a
whole egg if you buy the crust.
Mix all ingredients together by hand, with blender, or mixer.
Pour into unbaked pie crust. Bake in oven at 400 degrees for 25
to 30 minutes or until knife inserted in center comes out clean.
1/3 cup water
1 egg yolk plus oil to make 1/2 cup
dash salt
2 cups flour
In saucepan heat water and salt to boiling. Slightly beat yolk
with oil Add to boiling water. Remove from heat and dump in
2 cups flour. Stir until all flour is absorbed, adding more if
dough is extremely oily. Using hand and fingers, press dough
into pie pan while still warm. Flute edges. This dough cannot be
over worked it is always flaky, but it handles easiest when
warm. Use with any egg, meat, or sweet pie. Can be made ahead,
pressed into pans and frozen for later use.
Makes 8 individual pie crusts or top and bottom crust for an
8 inch pie or bottom crust for a 10 inch pie.

My ten-year-old son says he
wants to earn his own
Christmas shopping money
this year. He clipped an
advertisement from a
magazine that offers children
aged ten to fifteen a sales
commission, with a bonus of a
bicycle, for selling greeting
cards. Os course, I’m proud
that he wants to do this, but I
don’t want him to get taken.
Is this offer legitimate?
You should warn your son
to be very careful about
answering the ad, and do a
little investigating yourself.
There have been a number of
instances in which such ads
were misleading, deceptive or
downright dishonest.
First of all, your son may
have to pay for the cards in
advance, and then resell them
to get back what they cost, let
alone make a small profit In
quite a few cases, it has turned
out that cards costing a lot of
money were of very poor
quality, and the people who
tried to sell them were stuck
with hundreds of cards as the
company wouldn’t take them
back or give a refund. In other
cases, questionable companies
have sent children additional,
unordered merchandise,
closely followed by rather
frightening letters demanding
payment.
Further, you may find that
there is a small-print-clause
that says the child must sell a
certain number of cards (more
than a child could normally
sell) to receive the “bonus”
bicycle, or that the amount of
his commission will be
reduced if he does not sell a

Finally, there are cases in
which a child succeeded in
selling some of the greeting
cards, but when he sent in for
his commission or bonus gift,
he found that the company
had “gone out of business”,
and disappeared.
WARNING: Children have
also been victimized in selling
candy, magazines, costume
jewelry and other items.
If you want to follow up on
the ad, write the company and
ask for more details
concerning exactly what your
son must do, how much he
will be paid per sale and any
quotas or requirements he
must meet. Also, if you must
pay in advance be sure that
the price is not so high that
you couldn’t afford to lose it.
Additionally, check out the
company’s reputation with the
Federal Trade Commission,
which takes action against
companies that mislead
children in these ways, and
with the Better Business
Bureau in the city where the
company is located.
Just one last thought: It’s
great that your son wants to
earn his Christmas money. If
you decide he shouldn’t
follow up on the ad, why
don’t you suggest that he
check with some of the
reputable businesses near your
home to see if there is some
job he could do a couple of
afternoons a week? This
would give him the experience
of earning, without the risk of
being gypped.
