ATLANTA (PRN) - Summer has really taken a foothold
since school has been out. All kinds of summer projects are
being made for eat-outs, beach ventures, mountain climbs, and
good ole leisure hours in the sunshine. When summer comes and
we can participate in invigorating summer activities, we can
really be thankful for our strong, healthy bodies. Unfortunately
everyone can’t always be in tip top shape.
Sometimes we need to stay indoors for rest and recuperation.
If you have ever had to convalesce, you know how gloomy and
monotonous days can be. Perhaps if you have a friend that is
shut in for a while, you may want to pay them a cheerful visit.
Maybe you could take them a smile, the neighborhood news, or
a few garden flowers to break up the hum drum of their day.
Friendship is a very precious possession that can be
strengthened with little acts of caring. A little visit can seem so
small yet be so important. If you have time to show that you
care, you may want to take a friend some sunshine.
If you would like to make an extra special effort to show that
you care, here is a luscious golden brown Bread Pudding that
you may enjoy sharing. This Bread Pudding is perfect for people
on bland diets, for people who have temperamental digestion, or
for people who are getting well, because this dish is so easily
digestible and highly nutritious. This Sunshine Bread Pudding
will make a fine dessert for friend and family.
BREAD PUDDING
5 Georgia eggs, slightly beaten
% cup sugar
I'/a teaspoons vanilla
% teaspoon salt
4 cups soft crust-free bread cubes ('/2 to % inch)
4 cups milk, scalded
Combine eggs, sugar, vanilla and salt; beat slowly until
ingredients are mixed. Spread bread cubes in buttered shallow
I'/j-quart baking dish. Add milk to egg mixture slowly, stirring
constantly. Pour over bread cubes. Set in pan of hot water. Bake
in moderate oven (350 degrees F.) about one hour, or until set.
A knife inserted in center will come out clean when done. Serve
warm or cold with cream or whipped cream. Yield: 6 servings.
To variate: Sprinkle % cup seedless raisins and 1 cup peeled
diced apple over bread cubes. Add % teaspoon cinnamon and ‘/2
teaspoon nutmeg to eggs before beating. Bake in 2-quart shallow
casserole.
We suggest that you don’t use the Bread Pudding variation for
those people on special or bland diets.

Experiment Station.

Development Center and
