The dessert should also be geared to the rest of the meal and can supplement a light meal or add a delicate finish to a heavier one. Some times our daily menus are short of protein. If you find your menu lacking in protein, why not choose recipes with lots of wholesome eggs. A good recipe for the whole family would be this delicious Banana Meringue. BANANA MERINGUE 1 9 - inch graham cracker crust 1 cup whipping cream 1 cup flaked coconut 2 large bananas, sliced Combine egg whites and salt; beat to a stiff foam. Add sugar slowly, beating until sugar is dissolved and meringue mixture is stiff. Pour into crust. Bake at 200 degrees for 1 hour. Cool. Whip cream, add coconut, and sweeten to taste. Place alternate layers of bananas and whipped cream on top of baked meringue. Chill. Yield: 1 (9-inch) pie.
