During this year's Free
dom Walk on September 20,
2019, PJHS Jr. Beta students
had the opportunity to volun
teer to help with the set-up.
The Freedom Walk gave
them a chance to leam about
our area veterans and the

up the van and headed down
to Callaway Gardens. It’s al
ways beautiful anytime of
year that you go, whether
there are bunches of flowers
blooming outdoors or not.
There will be loads of pretty
flowers in the greenhouse.
Visiting the Callaway
vegetable garden is always a
treat. I loved going to the log
cabin when they have the
lady weaving baskets and an
other lady telling the story of
the cabin. Walking through
some of the azalea trails
would give your legs a little
break from so much riding.
We usually had lunch at
the hotel restaurant. Once
while eating there, Sue
thought the sauce they made
to go on the mm pudding was

erans, they had the chance to
help out in our community.
It’s safe to say PJHS Jr. Beta
students had a great learning
experience, as they each
brought back interesting sto
ries from our local veterans.

not made reservations and all
the large cabins were full. So
we had to take a one-bed-
room cabin, although there
were 10 of us to spend the
night. But you know, you’re
not in the bed very much, so
what does it matter if there
are 10 beds or two? In this
case, there were two beds.
We pulled the mattresses off
both double beds and laid
them on the floor. Therefore,
two slept on each mattress
and two on the springs. The
couch pulled out and made a
double bed, so that gave
everybody a place to lay
down. There is never a whole
lot of sleeping going on on
these trips anyway.
This trip occurred about
1982 and it just one of my
memories of travel.

in a motorcycle accident in
Jasper causing multiple in
juries, including a traumatic
brain injury that has left him
out of work
Anthony is a well-known
musician in our area and has
sung and played in benefits
and churches, as well as ven
ues such as Rocco’s and
Jaspers 4th of July celebra
tion for many years.
Anthony spent just over a
month in Wellstar hospital,
and is now having rehab to

benefit homeless pets in

Skin Irritation & Vinegar
If you have a skin irritation, sponge the area with undi
luted vinegar. If the itching stops, the condition is on the out
side of the skin and vinegar will quickly heal it. Applying
vinegar to the skin helps to normalize its PH balance.
I prefer organic apple cider vinegar. Vinegar is also good
to use for insect bites and stings.

We need some caring volunteers to aid in teaching con
versational English to adults. We currently have morning
classes and need evening classes as well. The students are
adults who have arrived in this country and need to leam or

Cauliflower Parm
1 large head cauliflower, stem
trimmed and cut into 1" planks
3 tbsp. extra-virgin olive oil
Kosher salt
Freshly ground black pepper
1 1/2 c. marinara sauce
1/4 c. freshly grated Parmesan, di
vided
1 shredded mozzarella cheese
1/4 c. basil leaves, tom if large
Crushed red pepper flakes
Preheat oven to 425 degrees.
Arrange cauliflower in a single layer
on a rimmed baking sheet and brush
both sides with oil. Season with salt
and pepper.
Roast, flipping once, until cauli
flower is tender and golden, about
35 minutes. Remove from oven and
top each cauliflower steak with
marinara sauce. Sprinkle with moz
zarella and half of Parmesan.
Switch oven to broil and broil
cauliflower until cheese is bubbly
and golden in spots, about 3 min
utes. Serve with remaining Parme
san, basil leaves, and red pepper
flakes.
