Enslavement of Negroes.
The enslavement of the African race
for commercial purposes laid ils be
ginning in southern Europe about half
a century before the discovery of
America by Columbus. It was carried
to Central and South AnArtca by the
Spaniards, and it existed there a hun
dred years before being transplanted
to the English colonies of North Amer
ica. From a small beginning made in
Virginia the institution grew and
spread to other colonies as they were
founded, and at the opening of the
Revolution there were about 000,000
slaves in the colonies.

GOOD THINGS FOR THE FAMILY
Most people like the old-fashioned
sour milk biscuit. When well made
, they are tender

of baking powder
with one pint of flour, sifting until
thoroughly mixed. * Add enough sour
milk to handle as soft ns possible, roll
out, cut and hake in a quick oven.
Spanish Beans. —Souk over night
one cupful of Spanish beans, and in
the morning boil until soft. Drain and
cook in a frying pan in one-half cup
ful of olive oil with four onions, finely
chopped, one chopped clove of garlic.
Stir until the onions are a golden
brown. Add a bay leaf, a pint of sift
ed tomatoes, salt and pepper to taste;
cover the pan and reduce the heat to
simmering, or place in the oven for an
hour. Serve in a vegetable dish with
a garnish of green peppers.
Fricassee of Oysters. —For variety
this is a good way to serve the favor
ite shellfish. I'ut a quart of oysters
with their liquor on to come to the
boiling point. When the edges are
curled remove at once and drain.
Into a saucepan put a tnblespoonful
of butter; when bubbling hot add a
tablespoonful of flour, stir until
smooth, then add the cupful of oyster
liquor and mix with tlie beaten yolks
of two eggs, salt and pepper to sea
son, a dash of cayenne, a teaspoonful
of lemon juice and a grating of nut
meg. Beat well, return to the heat
and cook just long enough to set the
eggs. Add the oysters and serve on
squares of buttered toast.
Chicken Mousse. —Chop and pound
the cooked breast meat of chicken,
season, mix with gelatin and whipped
cream and mold. Serve with a cream
sauce. This is both a dainty and
tasty dish.

The next comes bouillon or cream
(of “anything”) soup, with wafers, |
croutons or very thin ami very small
sandwiches.
Now comes the main dish, which
may be lamb chops, tenderloin with
mushroom sauce, potato croquettes,
all served on the plate, with a few
spoonfuls of the very small string
be ns, well buttered.
The salad course may be tomatoes
cut in halves, filled with Neufchatel
.cheese and topped with a thin slice of
green pepper, placed on lettuce, and
a French dressing passed.
The dessert may be maple ice cream or
plain vanilla cream, topped with ma
ple sirup, poured over it quite hot;
coffee and sponge cake, or little fancy
cakes may be served with the dessert.
Tlie above provides a meal which
may be prepared largely In advance.
An emergency dish for an unexpect
ed meal may be prepared by using
patty shells, which may be found in al
most any bake shop, filled with
creamed fish, chicken, sweetbreads,
mushrooms or oysters, any one of
which is delicious.
Accompany tills dish with a vegeta
ble or two, or one vegetable and a
crisp salad of watercress, or lettuce
with any snappy, highly-seasoned
dressing.
Where Ices, and frozen dishes of
various kinds may be quickly obtained
from the market, a dessert Is not a
dish to worry about.
