Georgia’s Wheatless Week—the big voluntary support
of the Food Administration to quickly export supplies to the >
armies in France—has resulted in a saving of “a world of ’
flour.” Approximately half the people in the state entered 1
enthusiastically into the movement and actually observed
the “Wheatless Week.” It “put Georgia over the top” first.
The saving was about 1,250,000 pounds of flour as this
state’s contribution to the food needs of the boys who are
shooting the Germans.
Here’s what Mr. Hoover, United States Food Adminis¬
trator, wired Dr. Andrew M. Soule, Federal Food Adminis¬
trator for Georgia, Saturday:

Please express to the people of Georgia my sincere ap¬
preciation of their patriotic*action in the observance of a
Wheatless Week. Such whole-hearted response to our re¬
quest is most gratifying and justified my confidence that the
American people will voluntarily save sufficient food for our
army and the Allies without rationing or other burdensome
regulations. I congratulate you and your staff—and the
State of Georgia—for the patriotism of, her people.

POTATOES AND PATRIOTISM.

' SCALLOPED POTATOES AND CHEESE
Arrange a layer of sliced rftw or boiled potatoes In a greased
dish and sprinkle with grated chetsa. Repeat until the dish Is nearly
full. Pour milk over the whole, about one-half cup to erery three pota¬
toes. 6klm milk may be used. Bake in a moderate ores until dene.
The length of time required depends upon whether the potatoes are raw
or boiled and whether the baking dish used is deep or shallow. Boiled
potatoes baked In a shallow dish will take only 20 minutes. Raw txrta
toes in a deep dish may take u much as 1 1-2 hours.
A SHEPHERD'S PIE
Grease a baking dish; cover the bottom with mashed potatoes. Add
a layer of cooked minced meat or fish, seasoned well and ai rN with
meat stock or gravy. Cover with a layer of maahed potatoes at least an
inch deep. Bake long enough to heat through, 20 to 30 minutes.

Use maahed potatoes in place of a third or a half of your flour in
making-biscuits and rolls and you will be doing your country a real

POTATO BISCUIT
Using 1 2-2 cups Instead of 2 cups of flour.
No liquid. 5 teaspoons baking powder.
I tablespoons fat 1 fg cups wheat flour.
1 teaspoon salt. 1 2-4 cups maahed potatoes.
Sift dry Ingredients, work In fat and add mashed potatoes. This
makes a very stiff dough. Roll one-half inch thick and cut into bis¬
cuits. Bake 80 to 36 minutes, in a moderately hot oven.
POTATO BISCUIT
Using two cups of flour Instead of three.
1 tablespoon liquid. 6 teaspoons baking powder.
2 tablespoons fat. 2 cups flour.
.1 teaspoon salt 1 1-3 cup mashed potatoes.
Sift together dry ingredients, mix in the fat and add potatoes and
liquid. This makes a very stiff dough. Roil one-half inch thick and
out into biscuits. Make 30 to 85 minutes in a moderately hot oven.

POTATO SOUP
11-2 teaspoons salt
2 cups hot riced or mashed potatoes Qoiory salt
1 quart milk. Pepper.
2 siloes onion. Cayenne.
3 tablespoons butter, 1 teaspoon ohopped parsley.
2 tablespoons flour (rice flour or
corn flour).
Melt the butter, add to it the flour and seasonings, stirring the mix¬
ture until smooth. Add gradually to this, one cup of milk and boll for
one minute. Add the potato, mix thoroughly, boding. then add the rest of the
milk and tko slice of onion. Heat to Itomove the onion,
strain the soup if naoessary, add the pareley and serve. Water saved
from cooking celery is a good addition to potato soup. Two cups of
tomato Juice and l-14th teaspoon of soda may bo substituted for two
cups of milk.
POTATO PUPF.
Add beaten whites of eggs to mashed potatoes (2 eggs to • me
dtum-slsed bake potatoes). Pita the mixture lightly in a bejjng-dtah and

cme-fourth cup of grated cheese also may be added.

POTATO LOAF
2 cup* maahed potatoes. 1-1 cup canned tom at oes.
4 tablespoon* minced onion. 1 erf.
2 tablespoon* frees pepper, or pi¬
mento pepper. 1-S cup ground peanuts.
Mix the ingredients well together. Turn the mixture into a but¬
tered baking disb. Brush it over with melted butter or dripping*. Bake
it hi a moderate wren for 25 minutes.
BKLOIAN BAKED POTATOES
Wash, pare and out into pieces as tor French fried petatoea. Lay
potatoes on an died pan, season with salt and pepper and bake in a
fairly hot oven until puffed, golden brown and mealy.
