Of Drying Vegetable*
A revolutionary new method ol
drying fruits and vegetables, which
promises to add substantially to our
j supply of preserved foods, has just
: been developed and is known a?
anhydration. “Anhydrous” refers
I to the nearly moisture-free final
j condition of the foods as the con
i sumer receives them, rather than to
| the process by which the result is
attained.
The new process, invented and de
veloped by Clarence Birdseye, who
also gave us quick-frozen foods, dif
! fers from earlier drying processes
! in that it is much more rapid, aver
| aging I'i hours instead of 18. As a
I result, the attractive appearance of
fresh food can reportedly be re
tained and the foods can be rapidly
rehydrated. Since foods dried by
this process require no soaking and
a minumum of cooking (carrots
need be boiled only 6 to 8 minutes),
the nutritive value and the flavor
compare favorably with cooked
j fresh produce.
Whereas by older drying proc-1
esses the carrots, po'atoes, apples or !
other foods were arranged in thin j
layers on trays or a belt, over which '
warm dry air was passed, in the an
hydrating process pieces of foods
are dried throughout by a combi
nation of conduction, convection, and
infrared radiant heat. This mass at
tack by all kinds of heat at once
avoids long exposure or scorching, t
! and is said to insure adequate dry
ing without “case-hardening.”
Warn Faulty Wiring
Cause of Many Fires
Nearly every day someone loses
a home by fire due to faulty wiring
and specialists advise these precau
tions to avoid damage from imper
fect electrical connections:
Do not stand on damp ground or
wet floor while attaching, detach
ing or using an electrical appliance.
Determine the cause of a blown
fuse before installing a new one,
since blown fuses indicate a too
heavy load on the circuit.
Make certain that only fuses of
the proper size are used.
Do not change fuse unless switch
is open.
Do not use any substitute for a
standard fuse plug.
See that all gears, rotating parts
and belts on electrical equipment
are enclosed or properly guarded.
Replace extension cords when
they become frayed or worn.
Retain Juices
The juice of fruit pies and the
gravy of meat can be kept from
boiling over and soaking into the
crust if they are placed in a tin of
boiling water when put in the oven
to cook.
Deep Sea Fish
Fish will not burst or blow apart
when they come to the surface but
most fish, if they get in shallow wa
ter, will die because their air blad
ders and abdominal cavities col
lapse from pressure of air without
pressure of water.

Little-Known Menhaden
Important Coastal Fish
. Moving northward from its winter
haven at the edge of the Gulf stream
1 off Florida’s coast is a fish ca'led
1 the menhaden. Though it is little
| known except along the Atlantic
and Gulf coasts of the United States
I some fisheries experts regard it as
the most important of all cast coast
fish. Year after year the menhaden
catch weighs triple and quadruple
those of haddock, cod and shrimp,
its nearest competitors in the same
waters. Only the pilchard of the
Pacific coast adds up to more
poundage in American fisheries sta
tistics than the menhaden, says the
I National Geographic society.
Scientists catalog the menhaden
as Brevoortis tyrannus. Among the
best known of its score or more
of everyday aliases are fatback
fNorth Carolina), mossbunker (New
York), and pogy (Now England).
Averaging just under a foot in
length and a pound in weight when
I full grown, it moves close to the
| surface along ocean and bay shores
I in crowded schools of 100,000 to a
i 1,000,000 or more.
From its winter spawning grounds

to Maine waters as the ocean tem
perature climbs above 50 degrees

hold menhaden virtually all year;
the Chesapeake region is their host
from early April to December; New

Thanksgiving; Maine, from early
June to late September,
Pre-Cooked Frozen Meals
Served to Air Passengers
For the first time, pre-cooked
“frozen meals” are being served to
passengers on trans-Atlantic clipper
routes. After six years of experi
mentation airline officials an
nounce that this new method per
mits serving oven-hot meals on the
new Constellation-type pianos wing
ing over the ocean at 300 miles an
hour.
The meals are prepared to specifi
cation of airline consultants, whose
extensive studies have determined
the foods to serve aloft. All foods
are fully cooked to the proper de
gree, then placed on a partitioned
plate, flash-frozen at 20 degrees be
low zero and kept at a tempera
ture not exceeding 10 degrees
above zero.
The packaged meals are placed
aboard in a pre-chilled balsa-wood
box, covered with stainless steel, in
which they can be kept frozen for 48
hours, or longer if dry ice is used.
Special features which expedite
the serving of frozen foods are the
tw'o electric whirlwind ovens in
plane galleys, which defrost and
produce 12 piping-hot, home-style
meals every 15 minutes that have
all the goodness and flavor of
choice meats and garden-fresh veg
etables.
