The Land of Tomatoes
mm

Um ii.#
FTALY—the | land of sunny skies,
warm colors, and good food—
Is indeed a land of tomatoes.
Have you ever visited the market
places of Italy? The women in
bright aprons, shawls and scarfs
evidently think more of good food
than thin figures, for with their
proportions it is no trick at al!
to balance a nja, rfcet basket on
their head3.
Let’s Look In
And if we peek into the market
basket, we will say, at first glance
that it is filled with scarlet red
tomatoes—big ones and the little
Italian tomatoes, which Italians
ip this country have introduced
to us through their back-yard
gardens. If we are lucky enough
to go hqrne with one of these
women, we will find tomatoes
converted into the most unbeliev¬
ably good dish<.- chicken caccla
tore, which is a broiled tiny
chicken smothered with a savory
j j sauce olive oil of and tomatoes, interesting mushroom,
season
ings; ve il scallopine, thin slices
j of vcai roasted in a similar to
m&to, mushroom and oil sauce,
ravioli, spaghetti, steaks stuffed
with tomato bread dressings—•
almost everything that they eat
has a flavor of tomatoes.
Since Italian tomato paste, for
those who like the more concen¬
trated native flavor, is -available
in cans, we can make these native,
dishes to perfection. For those
who prefer our own large ripe
luscious torn..:'I. in cans, the
addition of Parmesan cheese gives
this the necessary tang.*
