'Kings' stars share recipes

Dennis and Carolyn Lovejoy,
owners and operators of Swift
Street Inn, recently had as dicir
guests Dennis Quaid, his two and
one-half-year old son, Jack Henry,
Quaid’s wife, Meg Ryan, Jack
Henry’s nanny, Angela
Marcantonio, Gena Rowland and
her husband, Robert Forrest. They
were here for the filming of the
movie ‘The Kings of Carolina.”
Meg Ryan ssstopped off in
Perry here for only a couple of
days while on a promotional
tour for die movie “IQ" in which
she stars with Walter Matthau,
and Tim Robbins. She, Angela
the nanny, and Jack Henry, left
Perry for a few days at Hilton
Head while die “Kings" crew
moved to Savannah to finish
shooting the film.
They stayed at Swift Street
Innnnn, enjoyed the food and the
quiet, homey aunosphere of die Inn
and the friendliness of the
Lovejoys. They loved Perry and
all it had to offer diem.
Upon leaving the Inn, they
gave the Lovejoys some of dieir
favorite recipes, which they, in
turn, are sharing with our
Houston limes-Journal's readers.
We hope that you enjoy them.
Dennis Quaid's Collards
1 bunch of fresh collards (cleaned
and cut up)
1 very large onion, coarsely
chopped
4 - 5 cloves of garlic
2 whole jalapeno peppers
1/2 cup Worcestershire sauce
2 tablespoons water
1 bay leaf
2 tablespoons apple cider vinegar
Cover and steam about 30 minutes
on medium until tender crisp. Use
tabasco sauce, as preferred, at table
Meg Ryan's Poached Fish
(Meg Ryan is Dennis
Quaid's wife.)
2 - 4 fillets of fish (preferably a
light, white fish)
1/2 cup orange juice
4 green onions, chopped
1 large firm tomato, chopped
2 - 3 cloves garlic, crushed
Fresh ground black pepper
In non-stick frying pan pour orange
juice, bring to simmer Add fillets
of fish. Cover fish with onions,
tomato, garlic and pepper Simmer
until fish flakes easily. Remove
fillets with slotted spoon. Top
with vegetables.
Gena Rowland's Red
Cabbage Salad
1/2 liead red cabbage, cubed into l
inch cubes
3 cloves garlic
Fresh ground black pepper
10 cherry tomatoes, halved
Toss lightly w ith 1/3 cup rice wine
vinegar and I tablespoon sesame
oil
Robert Forrest's Turkey
Burgers (Forrest is Gena
Rowland's husband.)
1-11/2 pounds ground turkey
1 large apple, finely chopped
I small onion, finely chopped
1 cup fresh mushrooms, chopped
2 - 3 tablespoons lile soy sauce
2 cloves garlic, crushed
Fresh ground black pepper to taste
1 teaspoon Italian Seasonings
Form into patties
Grill about 5 minutes on each side.
Remember, best to use fresh
boneless, skinless turkey breast and
have the butcher grind it.
Preprocessed turkey has skin and
all, making the fat content as high
as lean ground chuck. Also, grill
quickly because turkey dries out
very fast.

Caribbean Chicken
During the dark days of winter, we
often need colorful and exotic foods
to make us feel warmer. This
recipe is based on an award-winning
recipe from the National Chicken
Cooking Contest.
2 tablespoons vegetable oil
8 skinless chicken thighs
1 can (16 ounces) unsalied tomatoes
1 can (4 ounces) diced green chilies
1 tablespoon brown sugar

1/4 cup raisins
1 tablespoon lemon juice
1 large banana, sliced
1 ripe mango, sliced
Heat oil in large skillet over
medium heat. Add chicken and
cook, turning occasionally until
browned, about 10 minutes.
Stir in tomatoes with their liquid,
green chilies, brown sugar and
allspice. Bring to a boil. Reduce
heat, cover and simmer 20 minutes.
