I > BEEF STEW.
Two pounds of beef, the round,
flank, or any cheap part (if there
; is bone in it 2 1-2 pounds will be

i rot, 2 of turnip, 2 potatoes, 3 table
spoons of flour, salt and pepper to ,
■ taste and a generous quart of wa
• ter. Cut all the fat from the meat
1 end put it in a stewpan. fry gently
* for 10 or 15 minutes. In the mean
-1 time cut the meat in small pieces
' and season -well with silt and pep
-1 per, and then sprinkle over it two
’ tablespoons of flour. • Cut the vege- j
tables in very small pieces and put;
’ dn the pot with the fat. Fry them ,

] vent burnirg. Now put in the meat I
* and move it about in the pot until
it begins to brown, then add the
quart of boiling water. Cover. let
it boil up once, skim, and set back,
' where it will just bubble for 2 1-2 j
' hours. Add the potatoes, cut in thin
' slices, and one tablespoon of flour,
mixed smooth with half a cupful of .
cold water, pouring about one-third
' of the water on the flour at first and !
] adding the rest when perfectly
' ] smooth. Taste to see if the stew is
। ] seasoned enough, and if it is not add
] more salt and popper. Let the stew
. come to a boil again and cook W
minutes, then add dumplings. Cover
I tightly and boil rapidly 10 minutes ]

CREAM TOAST.
Cut bread in even slices half an
inch thick, slightly dry in the oven, ।
then toast quickly over a clear fire j
or under a gas flame. It should bo ,
an even golden brown. For each two I
slices of bread have ready a cream ]
gravy made from a cupful of milk .
heated in the double boiler, thickened
’ with a teaspoonful of flour or corn
starch moistened in a little cold milk..
Cook until smooth and velvety. Add
a pinch of salt and a tablespoonful ■
of butter and pour quickly over the
bread, that has been kept hot in the |
] oven. Serve at one®. Milk toast is
