1 think, quite wholesome for a child
of any age. 1 have copied them at
various times from different books on
the subject of the children's diet. 1
have used them many times to great
advantage when the little ones seemed
to need a change and variety in their
lood.
rrune Pulp?Stew the prunes until
quite soft and then rub them through
a coarse sieve- Put this pulp back in
the water in which the fruit was cooked,
add enough molasses to sweeten
it, and let cook for about ten minutes.
linked Apple?Choose a large, juicy
apple. Pare and core. Bake until thoroughly
soft and then strain and sweeten.
Give it to the child with cream.
luiikct and Egg?Add two eggs beaten
to a froth and sweeten with four
teaspoonfuls of sugar to a pint of milk.
< urdle with essence of pepsin or junket
tablets. Pour into cups.
Orange .lelly?Soak one-half cui> of
cold wuter for half an hour. Add two
cups of boiling water and dissolve.
Then add one cup of sugar and one
cup of orange juice. Strain through a
very fine strainer and set away to
harden.
Bice .Icily?Wash one-half tablespocnful
of rice and soak in cold water
for two hours. Drain off tho water
and add two to three cups of milk,
t'ook in a double boiler for an hour and
a hUlf- Add a pinch of salt and the
white of one egg. Strain through a
fine sieve and poor into molds. Give
it to the child very cold with cream and
sugar. An excellent hot weather dish.
Chocolate llluue .Mange?Mix onefourth
of a cup of granulated Aapioca,
one and one-fourth teaspoouful salt
and one-fourth cup of granulated su- I
gar, and pour on gradually one am} |
one-half cups of hot cocoa, (look in
a double boiler about twenty minutes.
Remove from the lire and add one
fourth teaspoonful of vanilia. Four
into cold molds and serve with creaai
or custard.

fat from a chicken and chop it up,
bones and all, into small pieces. Add
salt and a quart of boiling water, cover
and simmer for two hours. Then alJow
it to stand for one hour, still covered,
after which strain through a
sieve. This is one of the most wholesome
and strengthening dishes a child
